I probably will do at some point, but i usually leave it a while for any tweaks to the main release version (for instance I went from 1.10.2 to 1.11.2). But also, everytime I upgrade to the next version it seems to run a tad slower, which kinda deters me as well.
Also, arent there a load of changes to the interface in 1.12?
I do the same thing, but mainly because I wait for OptiFine (e.g., the "real Minecraft"). You aren't missing anything. The launcher's appearance did change, but it's just a visual refresh.
I think I'm going to continue to wait on 1.12.2, though. OptiFine's not updated yet, but I'm actually considering using a glitch for the first time ever—the glitch that lets one Ender Pearl really, really far in the over world. I've managed to stifle the temptation for the time being.

If you want to try different versions you can create separate launcher profiles, with each version in a separate folder so you don't mess up your world by loading into a newer version and then trying to go back. In my main Minecraft folder I have additional folders like v1.8.9 and SNAPSHOT which the launcher points to. Each folder has a copy of my saves folder to I can test my worlds in different versions without risk (I'm only playing a copy of the world).
Instead of making the tea (!), I decided to watch for a while at the drop shaft at my gold farm during a recent XP mending gear recharge, see if I could see a ZP jockey. Sure enough, after a while, I heard a chicken, getting closer and closer ... then further and further away! (I assume it wasn't in the streams then but walking along the portal edge ... then closer and closer ... and then ...
Someone on Reddit commented that they haven't spawned naturally since 1.8.

It looks like the method net.minecraft.world.World.checkNoEntityCollision(AxisAlignedBB, Entity) is not working correctly and counts entities riding the same entity as colliding while it should ignore them. See also net.minecraft.world.World.getCollisionBoxes(Entity, AxisAlignedBB).

I have been playing 1.21.1 and 1.12.2 and have not seen a single one in months.
on the other hand, I have seen one or two diamond armor zombies (scumbags dropped nothing, even with looting 3 sword), a lot of baby zombies and one baby zombie villager.
Let me clear this all up for you guys. I'm the one who wrote the report.
Spider jockeys and chicken jockeys are still in the game 1.12.2 java. Some more rare varieties have been removed from the game like Stray spider jockeys and Stray horsemen jockeys.
The way you can obtain them has changed for now due to a bug. Spider jockeys can't spawn naturally but can spawn through mob spawners. Chicken jockeys can't spawn naturally but can from mob spawners as well as baby zombies jumping onto near by chickens. Husk chicken jockeys can't spawn naturally nor from mob spawners but can as baby husk jumping onto near by chickens. Stray spider jockeys can no longer be obtained in the game in 1.12 and same goes for Stray horsemen jockeys

Heh, heh. On a whim, and after a couple tries, I managed to get a post to the front of r/Minecraft Reddit. Less than 12 hours later, boom, it's supposedly fixed for the upcoming 1.13 pre-release.
I'm going to try for MC-2025 next, but there has been no luck on that front in all other attempts I've seen. I'll use the same throwaway account. I hate using such an inflammatory method and accusatory tone, but that's the one that worked, so I'll try it again. Too bad neither light-hearted humor nor asking nicely worked.
My question is, though, do jockeys spawn from skeleton spawners? I just can't believe that's true at all. I've used a skeleton XP farm for years and have never seen one, even before the bug. EDIT: No, just spider spawners. Re-read King_Ray above's last post.

Anyway, I was also going to say I haven't seen one naturally in a long time, but... I also don't see any horses with skeleton rider trap spawns (whatever they are termed as) either. Due to playing with an old world with terrain/chunks from 1.6.4 (or older), I never know how much of the lack of new features I see is down to that.

Mojang reduced the amount of skeleton traps considerably after widespread outcry that there were too many. I've seen only one since then. All the one's I've seen are from chunks generated in 1.7.10 four years ago. Of course, there is a big difference between 1.6.4 chuncks and 1.7+ ones . . .
Very unfortunately, the trap horses were "nerfed" into oblivion. They all have the same stats now, and they're terrible. Slow. Poor health. Very low jumping strength. One still can't put a lead rope on them, either, so to me, they're basically worthless.
However, I hear that they will make good mounts in the ocean after the 1.13 update due to sinking, but I have no idea about that.
