First time trying to kill the Ender Dragon. I lost my bows and food in the process and need to go back "home" and get new ones. The dragon was at half health when I left, will she be in full health when I go back in to the End? All the healing crystals at broken ofc.
Once all the Ender Crystals are broken, the dragon shouldn't be able to regen health. Even if it does regen over time, that 'time' doesn't tick by if no-ones in the End for the clock to run.
First of all, congratulations on your first Ender Dragon battle! You're doing well if you have all the ender crystals destroyed. The Ender Dragon won't heal unless it operates by some special rules of which I am unaware.
Before you slay it, though, remember the purple clouds emitted from its breath attack (usually while perched on the empty portal) can be collected on the ground in an empty bottle to obtain dragon's breath. I didn't know that when I last slayed the dragon!
In answer to your question, as Killr_Princess said, it's a basic principle of Minecraft: chunks (the area around the player) are only loaded if a player is nearby (depending on render distance), and if chunks aren't loaded, they are inactive and don't "exist" in time. In a non-modded survival single player world, if you're not in the End or in the Nether, then as far as the game in concerned, they basically don't exist. That might be a bit of an over simplification, but that's the general precept.
The good news is that even if the crystals weren't broken, nothing at all is going on in the End while no players are there. It's basically frozen in limbo with no passage of time. Plus, if on land (i.e., you didn't fall into the Void) and if you hurry, you'll be able to pick up your weapons where you died. That's probably your first order of business if you don't want to lose your stuff; items despawn after 5 minutes of being in a loaded chunk.

Exactly how did you go back "home" from The End with the dragon still alive?

Seems to me that one would lose more than just "bows and food" if they died, and "when I left" is an odd way to express death.
I dunno if it's possible to change dimensions via commands (but it seems...logical), I suppose he could've done it that way. Or maybe he just avoided the Dragon and built a way to the gateway islands simply to avoid having to leave the end if an unfortunate occurrance occurred when fighting the dragon.
Totally forgot that I made this topic in the heat of the battle. English is not my main language so sorry for the twisted sentence. I died, feil inn to the void and lost my last weapons and food.
You were all correct, everything were as I left it when I came back and I killed the dragon I struggled a bit to find the best tactic to take her out, but when I came back I managed to take her out with just my bow. It was so satisfying when the dragon died 😛
In single-player, normally, everything is "frozen" if you are more than 128 blocks away from it. That includes if you are in another dimension, like The End or nether. The only exception is the "spawn chunks", which normally remain loaded. Or if you deliberately keep things loaded, using machinery.
It can be different on servers.
It's not a fixed distance. It depends on your render distance (or the render distance of the server). 128 blocks is just the distance beyond which hostile mobs will instantly despawn. The chunks beyond that are not frozen unless your render distance is very short (8 chunks).
And the spawn chunks do not remain loaded when you are in another dimension. They also will unload if you are using Optifine with the Smooth World option enabled and you move far enough away from spawn (even if you are still in the overworld).
