I do a gigantic grid, the I build a grid just above and blow that to get what I missed. Gets nutty amounts of diamond, iron, and 5 chests of cobble. You spend 1/6th of the diamond making more picks to continue =P

I like to grid mine off of a large central tunnel. I usually mine the grid for as far as I can be bothered and always explore as many cave systems as i can find. Unlike most people i don't stack the grid on top of others (i don't really know why) I just increase the length of the main tunnel as far as possible. The main tunnel is always 6 wide by three high so that i can make use of the size of a tnt explosion in rock leaving a 2 block gap either side of a 2 cart travel system. This track is about 2 mins long in a mine cart at max speed and can have two users simultaneously. (I play SMP)

That's a great method because of the middle path, it saves time always walking long distances (if you mine straight 2x1) going back and forth. I use it too!

Usually this opens up a bunch of caves on the way down, which I can then explore. That failing, I would branch out at about 10-12 blocks above bedrock.
The concentration of good stuff is so much better at lower levels that I don't see the point of a big pit mine starting from the surface. Unless you need mass quantities of cobblestone.

i personally look for the lowest part of the land and start digging down some good examples; if their are patches of sand or gravel next to a mountain or in a valley. i start digging, more then likely ill end up in a large cavern and i procide to do that till i reach the bottom of the map or cave system.

I dig a 2x4 staircase to the bottom of the map, if I hit a cave I spelunk, if I don't I go to level 12 and make a system like this

I usally get 6 diamonds in 2 hours (real life) doing this
Starting at the surface near a base, a friend and I just mine a 2x2 shaft down to the top level of bedrock. Then we mine side by side to make super long tunnels on SMP. Not close to efficient, but fun to cover so much ground.
When we eventually mine into lava, we play a game where we try to make a lava fountain and not die. We make rooms every time we need to dump our stashes into chests or make more picks.
I definitely want to try mining in grids or strips though. I like the open strip mines idea. I might reduce a mountain in my world to 2 wide strips sometime.
