I feel like a wimp reading the other comments haha. I'm an investor of the more "normal" difficulty game mode.
There's no shame in still playing on Normal. Some people may not like the added struggles.
I do agree with Paradaux in saying there should be a harder difficulty, though.

If you'd like to talk with me about other games, here are a few I play.
Team Fortress 2
Borderlands series (Borderlands 2 is my favorite game, ever. TPS combat is a lot of fun and makes up for the lower-quality story, in my opinion)
Elder Scrolls series
Warframe (IGN is something like That_One_Flesh_Atronach)
Pokémon series (HGSS forever)
Rocket League
Fallout series
Left 4 Dead 2 (Boomer files always corrupt though)
SUPERHOT (SUPERHOT is the most innovative shooter I've played in years!)
Dead Rising series (Dead Rising 2 is one of my favorite games, and the 3rd was a lot of fun. 1st has poor survivor AI and the 4th is bad)
Just Cause series
Come to think of it, I mainly play fighting-based games.
I play on Normal, which in many ways is harder than Hard with the way I set up my armor, which is for the worst-case possible damage, namely creeper explosions, which increases by about 50% from Normal (49) to Hard (73) but most mob damage scales up much less; for example, skeleton arrows deal up to 4 on Normal (as well as Easy) and 5 on Hard (a 25% increase); zombies deal 3 on Normal and 4 on Hard (a 33% increase), and so on. This of course means that if I increased my armor protection by 50% I'd get less damage from most other sources.
In fact, by simply upgrading my armor I can counteract not just the increase in creeper damage on Hard but the addition of armor penetration in 1.9; shields are completely pointless when you can do that and I don't see why some think they are so vital. In my current modded world, where player armor only reduces damage by up to 66% instead of 80% I simply added Protection IV to my boots, which otherwise only have Feather Falling IV in vanilla (the base protection of my armor is 68% in vanilla and 56% in TMCW and enchantments increase this to 74.4-80.8%, averaging 77.6%, in vanilla and 76.2% in TMCW, which like 1.9 made Protection reduce damage by a fixed amount, 60% max compared to 64% in 1.9+ and a random 40-80% in vanilla pre-1.8).
Of course, since I'm using mods Normal is more like Hard in terms of armored mobs and other effects; my mod even allows them to occur on Easy (for example, in vanilla spiders have up to a 10% chance of potion effects on Hard only; in my mod the chance is 5-10-15% on Easy-Normal-Hard - and instead of being based on regional difficulty it is based on total playtime so it reaches the maximum and stays there forever after 100 hours. Of note, 1.8 nerfed difficulty by completely removing any possibility of armored mobs (etc) on Easy and made them only happen after some time on Normal, whereas in 1.7 and earlier versions they can occur on the very first day; 1.6 added regional difficulty which also nerfed it, whereas 1.5 was always at the maximum (because it didn't exist) and some mobs dealt more damage).
I often see multiple armored mobs at the same time; for example, I doubt you see this very often in any version or difficulty in vanilla (there were no other zombies around at this moment - every single one had armor:
The one in amethyst has 22 armor points (88% damage reduction + any enchantments) because their 2 base armor always adds to their worn armor, instead of being limited to 20. Unlike 1.9, only player armor was nerfed; 4% per armor point when worn by a mob and 3.3% when worn by a player; in a similar manner a mob with a tool with Efficiency will deal more damage as if it had Sharpness but players get no benefit).
I'd actually not recommend playing with my mod on Hard (the OP plays with it), which was mainly based around Normal; the only effects that Hard has that Normal does not is zombies breaking down doors, which is more of an annoyance than actual difficulty (Mojang even nerfed this in 1.7 or 1.8 by making only some zombies able to break doors, instead of all) and can be easily avoided with a few simple building tips, and starving to death but that can be easily avoided (more so since 1.11 nerfed hunger drain from most sources by a factor of 5; even the Hunger effect was nerfed).
...zombies breaking down doors, which is more of an annoyance than actual difficulty (Mojang even nerfed this in 1.7 or 1.8 by making only some zombies able to break doors, instead of all) and can be easily avoided...
This is off-topic, but are zombies still able to break down doors? I've only rarely come across villagers because I'm a lazy explorer, and I don't think I've ever witnessed this - but just curious as to if it still happens. Some village houses I remember coming across didn't have doors, but I assumed that was from village generation.
I prefer playing on hard mode in SSP, I love the increased level of challenge and skeleton drop enchant bows, and i think bows are better than diamond swords
I play on Hard always with added fun like Spice of Life, Lycanites, Hardcore Wither, Bloodmoon, hopefully one day Hardcore Ender Expansion will update to 1.10.2. Harder is better, this game was always to easy.

I find it intriguing how much I dislike playing in Normal! My self-preservation drive seems to be very strong haha. I mostly play on PEACEFUL! I keep trying to wean myself away and play on Easy, but usually wind up getting disgusted and switching back. Mostly, it's creepers that tire me out; I did notice that in some mods, I can turn off spawning of specific mobs, so I have done that once and probably will do it again. I am also the type who doesn't enjoy killing the animal mobs, so maybe it's just pacifism, huh?
To me it feels a lot like playing on normal, but then again I always make a bed as soon as possible and put torches down everywhere, so I usually don't fight any monsters until I'm well equipped.

I play on Eassy, but I turn creeper damage to the environment off.
ifigure the first level of diffuculty I will do is turning mobGriefing back to true. I get fed up with creepers blowing up the landscape, esp with how many are out there

I play on Normal/Hard on my world.
I have seen diamond armored zombies on both Normal and Hard.
I play hard.

I play on easy.
I exclusively play on Hard, with the exception of my on-going challenge world where I can only use TNT to break blocks, and when I forget to go Hard.

TheMasterCaver's First World - possibly the most caved-out world in Minecraft history - includes world download.
TheMasterCaver's World - my own version of Minecraft largely based on my views of how the game should have evolved since 1.6.4.
Why do I still play in 1.6.4?

I always play on normal, my friends set their server to easy although I can't blame them,
Hard for the most part, except on my main world (Normal) as it's quite spread out; and that's a lot of doors to replace.
