I agree with the inventory thing, I must have sword, pick, shovel, torch, and food. An axe is only when necessary for me, and I like hacking things better than a bow Also, I remembered I am OCD about storage, everything I have must be sorted into chests, like this!
Whenever I dig out dirt or sand, I try to make it look like a part of the world generation, so it doesn't look so out of place.
I try not to make buildings/bases that are completely square or rectangle.
And I always MUST have my items in the hotbar in the following order: Sword, Pickaxe, Bow, Empty, Empty, Water Bucket, Food, and Torches. (An alchemy bag at the right end if I'm playing Tekkit.)
Tekkit specific:
Every time I finish mining an ore vein, I stop and put it in the alchemy bag before moving on.
On multiplayer servers, I keep items in my alchemy bag rather than leave it in a chest that can be found, even around friends.

My inventory has to always be the same and floating trees make me shudder... Other that that, just perfection in my spawners and redstone creations. But that's normal for people who make them.

I hate it when people use the term OCD, OCD is a medical condition, now everybody who plays minecraft seems to have it. It's the same as this Parkour rubbish, it's just platforming. Why does everything in minecraft have to have some fancy name to it to try and distinguish itself from other games. Jumping from platform to platform is platforming, not parkour. Your not a master of Parkour just because you can hit a space bar on your keyboard.

i think i speak for most minecrafters when i say this: when you take a buckit of water and it doesnt fill back to a sourceblock and it leaves this random bit of flowing water in the middle of a still lake, i waste a good 5 minutes trying to fix it when i should be building/mining

When I'm practicing my architecture everything has to be symmetrical. When I'm strip mining I place a torch every seven blocks on the right side (But when I'm spelunking I don't give a sh*t). I always make double chests because single chests are just useless to me. I only strip mine on levels that have an even number. I always have 2 doors (Ya know, the symmetry thing again). I have slight OCD in real life but it's not that much (like I wont lock and unlock the door fifty times. I'll do it five times XD).

--Hotbar as such: with the empty slots being random building materials. Depending on whether I am actively spelunking or fighting mobs, the first and fourth slots may periodically be replaced by other materials, but this is very rare.
--Buildings must always be symmetrical, and all buildings constructed must completely prevent enemy mobs from spawning in the interior. This means I often use lots of glass, lava, and glowstone, since I don't like torches for lighting much.
--All redstone must be hidden, no exceptions.
--Minimum 8 furnaces in any given base, and for larger bases and my large structures, I typically put 16-32 furnaces in sequence (I smelt a lot of glass and smooth stone).
--Each base must be self-sufficient, with its own requisite farm(s), supplemental food source like wheat or melons, and these farms ideally should be within the base's confines, preferably underground and heavily fortified.
--All chests must be double chests, and adhere to a rigid categorization. For example, all "valuable" items like smelted ores, diamonds, etc. are placed into one chest (redstone and sometimes coal excepted). Redstone gets its own chests because I have so much of it, given I rarely use it. Food gets its own chests, but this includes items such as sugarcane and eggs which are not edible ingame but lead to foods. "Mass" blocks such as cobble, sand, sandstone, etc. typically get their own as well because to obtain the materials for my large structures I often stripmine specific sections.
--An area which I am building in must be uniform in block type and level. I spent two real life days clearing out a massive desert in my current world and replacing all the sandstone, dirt, and cobble in the ground with sand to ensure this.
I guess that's about it. Oh, I also don't take lava from the Nether. I just don't disturb Nether lava. No idea why.
I have a long list (40 long, YAY OCD NUMBERS!), so it's in a spoiler.
1. Play peaceful until I have a small mine started and a 64 bread per harvest farm up and running.
2. Then I play on easy until I have a bed.
3. Then hard all the way until I get to the end, when it goes to normal, so I don't die.
4. If there's a ravine, I go over it, then drop into it.
5. My chests HAVE to be organized.
6. Everything HAS to be underground, so symmetry isn't a BIG problem for me
7. Arches, no boxes
8. Lava MUST be covered with obsidian or cobble before I move
9. My hotbar [Pick, shovel, bow, planks, cobble, bow, food, torches, sword]
10. I don't eat meat or kill animals
11. Creeper holes must be covered
12. Jungles must be cleared of every leaf blocks and tree
13. Farming next to a lake or a river is a no-no
14. Beaches must be cleared of sand and filled in with water, down to bottom level, following the original slope
15. Plains must be flattened to the height of the block before I entered them
16. I only quarry mine in deserts or plains
17. When I see a mine shaft/stronghold/fortress, I HAVE to fix it up
18. Everything connected with paths and/or cart tracks
19. Torches go on right side of caves
20. Ladders must not be there, unless in a mob farm. Stairs all the way
21. Dungeons. Take chests, make a mob farm.
22. Cats and wolves MUST BE TAMED OR KILLED
23. Zombies must be killed
24. Same thing with all other hostiles
25. Trees must go, unless in landscaping or farming
26. Yard must be fenced in (only in above ground structures, I usually dig out my things, like stated above)
27. I must keep bones on me at all time. Instant-grow some wheat when I'm hungry to save my life, eh?
28. Torches must be no more than 7 blocks apart, no less than 2
29. Animals live in comfort (not in pens or cages, I make HOUSES for them)
30. Villages must burn, after I get the villagers out and back to my base

I cannot make myself use mossy cobble. I hoard it worse than diamonds. If I try to use it, I get paranoid about a creeper possibly making me loose a piece.
I can not use lava as a light source, I worry about it escaping some how.
I can not make things that are 6 wide, deep, or high, not sure why, but drives me nuts. I can not have 6 chests, must be 5 or 7, 8, etc.
I prefer making things in 7's, or multiples of 7.
I can not partially chop down a tree. If I find a tree that for some reason is not touching the ground, I either put a piece of dirt under the trunk, or destroy the tree.
If I see dangling sand in the air, I must make it fall.
I can't seem to make myself get a pet dog, but I have tons of cats.
I fill in creeper holes. Not just on the surface, the entire crater gets filled.
It drives me NUTS to have a door open, all have pressure plates.
I avoid the tundra biomes, not sure why, but I don't feel safe.
If I destroy a tree, I MUST find a sapling of the same kind and replant on the same spot.
I have to say it would be mainly aesthetics. But it's such a big topic because i hate looking at cobble so instead i smelt smooth stone and mine out dirt, gravel, any inconsistancies and replace it with smooth stone. Also i like grandstanding like a red carpet, epicness and other such things.
ALL my uses of redstone have to have totally hidden wiring! I hate the look of it standing out, so I go to GREAT lengths to only use underground wiring on all my things like: Automatic Wheat/Sugar Cane/Melon Farms and ANY items that use pistons.
The wiring has to be totally hidden inside and out. but hey, it does look cool but sometimes is very hard work to do.
