Hmm... I recall testing every falling block I could think of, and I'm pretty sure armor stands worked, but I never thought of putting armor on the stand when testing...

A beacon: 15, kinda nice if you want to kill mobs near your base.
A creeper skull: 5, it is rare and nice for decoration.
A totem of undying: 1, it is useless for me.
An enchanted golden apple: 10, it could safe my life.
The dragon egg: 0, I want to obtain it by killing the Ender Dragon and not with diamonds.
Sponge: 0, it sucks.
Mending book: 2-3, it is pretty nice.
Maxed out diamond pickaxe (Eff V, Fortune III or Silk Touch, Unbreaking III, Mending): 15, it is pretty nice for me (I do mine a lot in my hardcore world because I like to obtain resources).
It depends on how many diamonds I have and how badly I want the item. Gold is honestly more valuable to me, to a point. I'd probably trade a stack of diamonds for two stacks of gold if I had many stacks of diamonds and was low on Gold, but I wouldn't go 1:1 unless I was desperate and also trying to help someone out.
Typically if i have many diamonds, the others might not be a big chore to get (beacon maybe, especially if i wanted multiple, but I've yet to build a pyramid with more than one beacon so maybe one day). And with some of them (for example, the beacon again), I might find killing the wither as part of the experience to get it, but that's just how my play style is. And again, I might have a different opinion depending on whether I was after one or many.
Diamonds are pretty useless useless in modern Minecraft (largely due to Mending), probably even in 1.20. Well, not useless... but I would presume anyone with most of those things wouldn't value them too highly either.
There's also the fact that some of those (totems of undying as one example) could be farmed, but I don't play using farms, so I might value them more highly.
For me, the Enchanted Golden Apple and Totem of Undying might be the only things I'd highly value from that list. Some I might value but not enough to trade for unless, again, I had many diamonds and was desperate for that specific thing. But some (like Mending book, Elytra, Shulker Box) I can get far too easily and/or would rather put in the experience getting them. Elytra and Shulker Boxes especially I'd rather get the usual way, because its so rare to need to go to the End dimension I'd jump at any chance to. Still hoping they refresh that dimension one day.
Overall i think valuing them in diamonds isn't the way to go. I never played using currencies like that. I'd always just trade one wanted thing for another wanted thing and then we'd decide on a ratio that seemed fair (sometimes making it lopsided on purpose if one player had a lot of the thing the other wanted, for example). I've traded wood logs for dirt at times.
Now that you need tons of diamonds to make netherite stuff, I wouldn't trade them for anything like I used to.
Maybe I'm just tight fisted, but I wouldn't use diamonds for trades, as I'd be losing a non renewable, especially a rare item, to obtain a renewable, which to me negates the benefits of trading, as trades are supposed to grant players unlimited resources in exchange for the work they put in to farm something else, usually farmlands by trading paper made from sugar cane, with librarians, or carrots or potatoes with farmers in exchange for emeralds as payment for your services.
I guess it depends on how badly you needed those emeralds at the time. But even before 1.20 I would use surplus diamonds to craft Jukeboxes and sometimes enchantment tables in different bases. After the tools and armour had already been made up, I would just stash away the diamond ore in case a need for them would ever come up.

What the game needs as far as diamonds go is more things which only diamonds are capable of doing, if players want more use for diamonds fair play, but wouldn't it had been more sensible to make only certain statistic buffs unlockable on beacons if diamond blocks are used? such as level 2 Resistance or 40% damage reduction which is quite a significant buff if you ask me, especially when it is stacked on top of the already insanely powerful buffs of armour.
These are late game items which are not even required to beat the game, they exist to allow players to achieve a sort of pseudo god mode at their base as a reward for defeating the Wither, and in the case of the Haste beacon, make mining much less tedious.
Netherite gear isn't needed to beat the game either I know, but the netherite tools being 25% more durable than diamond tools means netherite pickaxes and shovels are useful for builders. That 25% durability bonus is stackable with unbreaking III enchantment which you could potentially fill up an extra single chest of items before a repair is needed.
You can use fence posts, nether brick fences or cobblestone walls.

I sell shulkers in my realm for 5 diamonds, but for me I would rather get one myself than pay even one, I quite enjoy end busting

To me elytra and shulker boxes are the most useful items!
I rate shulker boxes even higher then elytra.
I wouldn't pay for mending books, i would pay for permission to trade with the villager it came from.
The dragon egg is more like a trophy to me. There are other ways to destroy bedrock.
Maxed diamond pickaxe? ...maybe. You always need 1 for silk and 1 for fortune.
The totem is defenitly worth diamonds! i never fly without a totem. It may not protect you from the void but...

i would say beacon is fair price but god apple is worth like twice as much as a beacon idk why you would put 2 diamonds?
anyways creeper head is relatively easy to obtain beside the fact that you need a trident, so i would give it a 10 diamond price
