The first thing I do is get 16 pieces of wood, mine some stone, smelt my wood to get charcoal, find some food, and then I craft a bed once it gets dark.
Punch wood, make crafting bench and wood axe, chop wood until axe breaks, repeat until dark or until I have 2 stacks of every available type. The idea is to collect as many different resources, particularly things that can be farmed wherever you like so that when night comes you can bury yourself in a tiny hole and spend the night making that tiny hole a bigger hole to house your necessity farms.

-Make pickaxe
-immediately mine some stone
-Make stone tools and a furnace
-Find iron, if possible
-Chop down trees
-Make a shack

Spin around, look at how crappy your spawn was, walk off for a bit totally forget what I am doing. Finally decide I should hit a tree to make a work bench and some tools but Ive wasted the day looking around. Now I,m hungry and its getting dark......... thats typically how it works.
Gather seeds, find a nice little riverside, build a farm, build a house, and dig a mineshaft opening. Get shot by skeleton because I forgot the time... Stone tools optional at this point.
The VERY first thing I do, before taking a single step in any direction, is to punch out the 8 dirt blocks around my feet and use them to pillar up to make a marker for my spawn point. That way I can explore and always find my way back to my spawn.
I used to live on the surface, and never do much mining at all. But lately, I mostly dig down to Y=11 and pretty much live underground. Sometimes I'll eventually make a house up on the surface, but mostly, once I'm under ground I tend to stay there. Sometimes I'll go weeks before killing my fist monster!
My latest world is the exception. The very first thing I did was build a temporary hut on the shore near an ocean monument, and work on hollowing out the monument so I could make my base inside it. That was a lot of fun, especially since I recorded the whole adventure. I may edit it into a YouTube vid some day if I get ambitious.

Besides the usual, punch a tree, crappy wooden pickaxe, get stone, make lightly less crappy tools? Look for a place to set up my first camp, kill sheep for bed and food, nomad for a bit, usually park in grassy plains near mountains and water with a desert not too far off, then spend an hour killing all the grass because I detest tall grass and play on console so there's no world edit options.
Then I start building a tiny wooden shack , dig out a deep, wide basement get spruce trees and plant them two by two for either super tall spruce or big christmas tree if I'm unlucky.
Then i set up two furnaces and a chest for food, cook, eat, then get some tools, crappy stone weapons and no bow because i have no arrows and torches and find a deep cave where i will die the first of many times. Get lost finding my way home, get frustrated and decide this map sucks and quit.
--- then spend an hour killing all the grass because I detest tall grass and play on console so there's no world edit options.
Pour a bucket of water on the grass and wash it away. Much easier than breaking it all by hand. Then you can run around the edges and collect all the seeds to start a wheat farm.
I've created two survival worlds and they both started out the same way. I ran around like an idiot trying to find a big mountain I could build a giant castle out of for two MC days straight while dodging enemies and neglecting my responsibilities as a survivor. Though, with the second world, I found a jungle temple on Day 1 which was helpful.

If I'm in a heavily-forested biome or a hilly forest biome, I tend to make a stone axe to collect more wood in the heavily-forested area, but because I tend to dig into hills on Day 0 if I'm in a hilly forest.
Whew. That was a mouthful.
