I know we can never expect the other dimensions to have as much content as the Overworld, but the End is cripplingly dull and needs some serious work. But the worst part is that unlike in the Nether where you can build a return portal anywhere you please, when you want to take a break from exploring the End, you have to backtrack the entire damn way back to the start to return to the Overworld. (Or just dump all your stuff in your ender chest and kill yourself.)

I'll still be inclined to agree that the outer islands are a bit barren. More end cities would be a terrible idea, simply because it would get too crowded and make elytra too easy to find, but at least a little bit more variation in terrain generation would be nice. Maybe some random bridges of end stone stretching between islands, or even patches of end brick in vaguely structural patterns. Just something to break the feeling of "yet another chorus grove" and mix things up a bit.

Yes, I know there are three mob types in The End. But the Enderdragon is only fought on the central island and Shulkers only appear in End Cities. When you're building bridges from island to island looking for an End City, which from my experience is what the bulk of your time in the End is spent doing, there is literally nothing to look at but end stone, endermen, chorus trees and the Void.
The End may be more interesting now than it used to be, but it's still far too empty and urgently in need of more variation in terrain and terrain features. There is no reason to explore it other than to collect some Elytra and however many Shulker shells you want, because there's nothing to discover but the odd End City, and the terrain itself is so repetitive and barren that it quickly becomes tiring to look at.

Actually, now that you have an Elytra, navigating the End islands is much easier. Craft yourself a bunch of fireworks rockets, gather some ender pearls and go exploring by air. I was able to collect this double-chest worth of loot in a relatively short time by flying around the outer end islands.

But why would I want to? There's nothing left for me there. The terrain is all exactly the same, every island is identical to the last unless it has an End City on it, which is quite literally the only land feature in the entire dimension. And I plundered so many End Cities to find one with a ship that I'll never want for shulker boxes. The only reason I was still in the End before I found an Elytra was to find an Elytra. I'd much rather use it to soar over the dozens of biomes and awesome terrain features of the Overworld than the sparse cheese block desert of the End.
You can also make a simple but pretty effective ender pearl/XP farm by just building a two high roof on the end island to stand beneath. I used lower slabs to prevent endermen spawning on top. To prevent them from teleporting on top, cover it with double-carpet.
Just stand under the roof and look at all the endermen in the area, then whack 'em with a sword (preferably with the Sweeping Edge III and Fortune III enchants) and collect the pearls and XP. It's not only a good source of Ender Pearls, it's an easy way to fix up your Mending armor and tools. I collected a little over two stacks of pears from the horde in front of me in that picture.

The last time I played Minecraft was before the End even existed, so I have no experience with this. All I know is that the End contains a near endless expanse of land which the developers presumably put there for us to explore, but the whole dimension consists of nothing but a single terrain type, a single terrain feature, a single structure type and (outside of that structure) a single mob type, which makes exploring the place painfully monotonous compared to the Overworld or even the Nether.
I have to agree that there is not much to the End, even since 1.9 - even the Nether, which has more reasons to visit it, is basically nonexistent to me once I get what I need from it (in my first world I literally did not go to the Nether for 3+ years, until I needed more quartz). That fancy loot from End Cities? I don't need more than one set of enchanted gear, plus they likely have enchants that I may not like anyway (for example, my sword must have, and only have, Sharpness V, Knockback II, Unbreaking III, Sweeping Edge III, Mending (though since enchantments do not affect costs since 1.8 it might have Looting as well but I do not consider it important on my "caving" sword; Fire Aspect is definitely a no-no). The way I make most of my gear is by mining Nether quartz for XP (as well as building materials) and enchanting books, then applying the books; pickaxes and bows may be directly enchanted). Elytra do not really interest me either; it is much easier to make a railway between permanent bases (I have never used horses either) and otherwise I don't explore the world like most other players.

Endermen farms do not interest me because I only need Ender pearls for the occasional Ender chest and drown in XP though just playing normally (I still play in 1.6.4, where it costs much more to repair your gear (not even considering my modded worlds, where I had to increase the anvil cost limit in order to be able to repair my gear) and have never needed to get XP aside from enchanting, and I usually enchant all of my gear before going to the End even though I don't use most of it until afterwards).

That improvement alone has given me incentive to spend more time in the end.
I have an entire ender chest full of shulker boxes. That's plenty. I carry about 750 inventory slots with me now - home bases have already become optional.
Any recommendations you can offer for content mods for 1.11.2? I discovered a few cool looking ones I'd have liked to install on my server, like Witchery, but most seem to require a much older build.

Do let us know what you find out. The central portal should always take you back to your last bed or, failing that, back to the world spawn. It won't necessarily take you back to the stronghold unless you slept in a bed there to set your respawn point.

The only difference in this last departure was the use of one of those new return portals. My mission is to find four more Elytra so my buddies have a repair set, so it might be next weekend before I'm able to test again.

That's why I don't play vanilla; I can use Spigot and maintain all the vanilla feel I want but just add in certain little things like /spawn
