Earlier I was messing around with an enderman that spawned in a room in my house. Just for fun, I dropped gravel on him and he started to suffocate. He picked up the block his head was in and saved himself. So I went and did some testing in creative and I found that 8 of the 10 endermen I suffocated saved themselves by taking the block that was suffocating them.
Has anyone else noticed this? They seem to save themselves from suffocation.
Assuming your 8 out of 10 is from 10 endermen, while it sounds cool,
and I sincerely hope you're right, but from a statistical view, you can't validate your results. Maybe if you ran the test more, as in at least 100 times, you could have a more concrete answer.

Why aren’t my conversations peppered with spontaneous witticisms? Why don’t my friends demonstrate heartfelt concern for my well-being when I have problems?… I gotta get my life some writers." ~Calvin, Calvin and Hobbes

He's not asking if they can suffocate. Read the post.
If they take the one in their head is in, then the 4 one will drop on their head and fully suffocate them
