If Minecraft gets boring, I just go and download a sick looking mod (or mod pack) and check out its new features it has to offer. I play multiplayer too and skype with friends that play minecraft. Another way to have a bit more fun, is to try out a PvP server.
I've been playing with my friend since January 2011 and it almost never gets boring for me. I've been playing some hunger games recently since they have public servers now. Also me and my friends like making new build designs and build all day.

Minecraft gets boring if you only do one thing all the time. If you have the impulse to build something dumb, do it. also, try to mimic your other games. for instance, i got the TooManyItems mod and MCedit To create zombie survival like Call Of Duty zombies, but you make the map!
Play your world in Multiplayer! I got bored with my world in Singleplayer, but when I play it with my friend, it never gets boring! One day we find diamonds and emerald ores, and the next day we find an NPC Village.
I grew bored with Minecraft months ago. I ran out of stuff to do, and I partially got frustrated because my original world was a hodpodge of versions going all the way to early beta, and everything kept changing.
My castle in the sky got changed to some dull biome, and I ran out of stuff I wanted to do in that world because if I wanted to access newer stuff I had to go further and further away since I liked exploring too.
Right now, I'm waiting for 1.3 to come out because I'm inclined to play again, but by starting over. Start in a large biome world, preferably in a snow area and maybe make an ice castle. That'd be neat if tricky. But so many things have changed that I'd have much closer access to so it might be worth doing.
I used to use a mod I think called AdventureCraft or something. You started near a guild, and you killed monsters until you became a lord and could start your own town, but it stopped updating and I don't know if there was a replacement mod. I wouldn't mind trying that again for a few more goals. And gold coins. Anyone know that one?
So if you need a break for new ideas to come, take them. If you want to try mods, try em. If you want to try interacting with other people, you can try servers too. (I tend away from that because I don't want others messing with my creations.)
But really, it's all about how you enjoy things. If you like goals, make up new ones or try a mod that has them. Maybe even try a challenge. If you like making stuff, try to figure out new interesting things to make, using newer items where possible.
Lots of options if you look for it. And if not, the game will still be around when you return with interesting changes to be sure.
Minecraft doesn't get boring for me at all! After you get all the diamond stuff and all that, think about making a bigger and better house! Some things you may want to add are: even more floors, farm(animals and plants), ain't-creeping your house(taming cats and caging them up around your house), and creating your own weird trees by putting all different wood types, crafting tables, all different leaves together in a big crazy tree. I have some more ideas if you want.
if you play it 24/7 then obviously it gets boring cause you run out of ideas...if you don't play as much then you have time to think of more ideas/projects to build
Installing texture packs, maps, and mods is a great way to give minecraft a new look. Playing on a multiplayer server is sometimes not fun, as they normally need you to pay money, so instead you should host your own, and invite you friend.. If all else fails, play something NERD.
Yes, it certainly does get boring. But the best thing about Minecraft is that there's something for everything. You can build, mine, craft, explore, kill, or any combination of them. Watch some videos on YouTube and you'll be sure to find something to do. Play Multiplayer, probably the best experience you can get from Minecraft. And install some mods! It's a little bit of a challenge to do the first few times but it's worth it!

If you get bored of playing with friends, just kill them, steal their stuff, and run away. The results are either fun or !!FUN!!.

On Topic: Minecraft can actually get boring, but that would take a lot of gameplay to reach that stage.
