I was watching some vids on how to build simple blaze farms. My past blaze grinders have not worked very well, but the "simple" ones I see on YouTube still involve a lot of redstone, and in my new world I haven't found a lot of redstone yet. So I tried out this design and it works FANTASTIC!
I built a 9 x 9 x 5 high cobblestone room around the blaze spawner. Those are the inside dimensions. Outside, the room is 11 x 11.
Beneath the room is a funnel of glass. Each step of the funnel is 2 blocks high so the blazes can't climb out once they fall down one stage.
Under the bottom of the funnel is a bottom slab. That prevents the blazes from ever seeing you or being able to shoot fireballs at you.
You stand at the bottom and whack their feet off. In something like 15 minutes or so I got to level 35 and collected 1-1/2 stacks of blaze rods. All without redstone of any kind.
Here's how it looks:
One word of warning. You WILL die a lot during the building of this farm! I think I died about 10 or 12 times. I started out by encasing the spawner area, 9 x 9 x 3 in netherrack. That stopped the blazes from spawning so I could build the room and the funnel. But then I had to hollow out all the netherrack to activate the spawner. That's when I got killed a lot. I just went in with nothing but a cheap iron pick and chipped away netherrack until I died. Then I ran back in with another cheap iron pick and did it again. And again. And again. ... But in the end, it was worth it, because I got so much XP so fast it didn't matter that I died so many times.
On Edit: Make sure your nether portal is far enough away from the blaze spawner so that when you port in after dying the MOBs all despawn so you can run into the room while it is still empty of blazes and chip away until they start spawning and kill you.
I would think that could be done safely by leaving a netherrack floor under the spawning room until last then using a potion of fire resistance and good armor knock out the floor killing any blazes as they spawn.
Fire resistance potions are desirable when building Blaze farms, by the way. Blazes do no damage other than fire, IIRC. With 3-6 potions and diamond Protection IV armor, I doubt you would have ever died.

Huh. I didn't think of that either. I thought Blazes would spawn no matter the light level, but according to the Wiki, they spawn at 11 or less in a 9x9 area; not too terribly hard to light.

HAH!
You think?
The light level diagonally above a torch is.... 11!
That's in the corners of a 3X3X3 box with the torch in the center.
Cover the floor with torches and blazes can spawn three blocks above them.
Now as long as you make sure the the room is no larger than 9X9 and completely cover the walls with torches and put some on the spawner then you can do it
I didn't think of fire resistance potion because I don't have a brewing stand yet. Part of the reason for making a blaze farm. Doh! I could have collected a few rods, made a stand and some blaze powder. Good Idea. I should have thought of that, but I didn't.
As for diamond armor, when I built this earlier today I had only found 4 diamonds so far. Enough for 1 diamond pick to mine obsidian for the portal, and not enough for anything more than a shovel, and not even enough enough for an enchanting table. This is a brand new world, only a couple days old.
Anyway, I built up XP so fast after dying a dozen times that it didn't really matter that I died. And since then I found enough diamonds for a full suit of armor + and enchanting table, so I'm playing with the big kids now!
If it's just the last hole, it must be that the blazes are colliding with each other and can't get into the hole. Mobs didn't push each other much before recent updates.
So I suggest to expand that last 1x1 hole to a 2x2 hole. You can reach blazes inside a 2x2 area pretty well from the outside with a bit of running around.
I think that maxEntityCramming gamerule can be turned off, so you can essentially give a big middle finger to the recent update that added the gamerule.

I just took the Minecraft Noob test! Check out what I scored. Think you can beat me?!
A suggestion for building this in survival - if you're going to fill your spawning room with something to prevent spawns while you work on the rest, use sand/gravel instead of Netherrack. Once you're done with the build, you can knock out the filler using a 1-high hole in the base of the spawning room wall, and any blazes that spawn won't be able to aggro you through it.
Of course, if you do this you'll probably need to build a floor on your spawning room out of something that defies gravity, or you'll have to clear out your funnel as well. It depends how much extra time you're willing to spend on the build to avoid the chance of death by blaze.
Or of course you could just wear all your second-best gear, chug some fire resist potions and battle through it.
Built this in my recently new survial world on Minecraft Bedrock edition (windows10). Works as expected. Did not have any trouble funneling the blazes into a 1x1 hole.
To control the blaze spawning while I was building, I built a 9x9 floor under the spawner, and put torches on all sides/top of spawner, and every floor block. This was mostly effective. Then I built the glass funnel and collection system (simple hopper into a chest). Then I went into the spawner room through a 1x2 opening, removed the torches from the spawner and took out the floor, backing my way out through the 1x2 opening. I sealed that off, and it was finished. Managed to build this entirely without dying and without being harrassed too much by the blazes.
Built one first in creative to make sure it worked before wasting the resources in survival. Here's a screenshot for anyone trying to figure out what this looks like (feel free to copy this image to the original post, since there isn't a picture).
Blazes drop double the XP of most overworld mobs. If you have a mending sword this looks to be better than overworld mob farms.
Edit: Just built this with a friend on my world. It takes a minute or two to get going but then it works fairly well, definitely more reliable that exploring the nether looking for quartz. Although I have to say, don't make one if you're in it for the blaze rods, I've got enough for the rest of my current world and the next just from building this thing.
Blazes can still spawn. They need higher light levels to stop them completely. You need to spam stuff EVERYWHERE. Its easier just to have to kill a couple of them while building instead.

Yes. If you think that's "too terribly hard," you probably should be playing in Easy or Peaceful.

Keep in mind too that there is now a maxEntityCramming rule since that farm was posted, so unless you change that the max entities stacking is 24.

Use slime blocks. You still run all the usual risks, but you can bust those all away when the time comes in about 30 seconds.
EDIT:per the OP, this probably wasn't an option, but still...love those slime blocks, great for removing water as well.
Could also use end rods to fill the space with light until you're ready to clear them.
