So I was wondering if villagers affect wheat, trees, or anything that grows in the same way I do when I am in range? Assuming someone is logged on the server somewhere, if I am no where near my wheat, but I have a villager near it, will it continue to grow as usual?
Absolutely not. If you spawn near a village, you will see farmland with lots of little baby wheats. Hang around, and the wheat grows.
But if you play for a month, and then travel a kilometer and find a village, their farmland will have lots of baby wheats. The whole time you were playing, the wheat didn't grow. Also, the zombies didn't eat the villagers.
