I feel that sand is more useful than gravel since sand leads to sandstone and glass. Sandstone is nice decoration like for a marble floor and Egyptian like walls. From glass, you could make bottles, which are required for potions, which are EXTREMELY useful in tough situations. With gravel, all it is is just arrow tips and flint, which are still useful, but sand offers more value. Therefore, I vote sand...
i prefer gravel, as its far more common (no deserts near me), so its fairly easy to backfill areas ive dug into when i want to keep the cobble. for filling in large open areas in your tunnels roof, fill the roof level with cobble, with a hole to get out, backfill with the gravel you dug out of it, then cobble up the remaining blocks.
Um, i feel that its not really about what you can make with the item cause thats for the item not sand or gravel. so i like sand better cause its easier to gather quickly.

If you meant which one is better for reverse pillaring into sinkholes and surface ravines/caverns then I would say gravel
I don't use the nether that much but keep in mind that there is no way to make potions without netherwart or glass flasks.
I would rather have a half stack of both than a full stack of one.
