I always play on easy (except on my one peaceful survival world), and nothing else. But I never wear any armor stronger than leather, and I seldom wear armor.
I always play on hard for the initial day, whenever I'm caving, or whenever I'm in the Nether or the End. Other times I will switch it to peaceful because it's just a pain having to go back to my bed and sleep every day. Mobs aren't difficult to deal with once you have iron armor. I recently went on a killing spree for some ender pearls and took 3 direct creeper explosions and lived (thanks to blocking).
I got tired of finding craters in otherwise pristine areas, plus I'm in the middle of a huge project, and the structure's so big that I can't fill it in, or even light it. I don't want mobs to spawn inside of it, especially creepers.
I do it so that I can get prepared for monsters attacking me...

I build walls around everything I build cause I don't like being murdured when I go out for wood.
