For me it's a toss up between coal, stone, iron, and wood.
Need wood to make tools.
Need stone for a furnace
Need coal to smelt and for use in torches... unless you like turning forest biomes into prairies.
And at last you need iron to mine gold, redstone, and diamond, which are really nice to have for decorative/efficiency purposes.
Whoever said gold is better than diamond, you're actually wrong. Gold tools do mine faster, but they have less uses than wood tools, which means you better be sitting on a mountain of gold if you want to get any work done. Gold armor is also pretty terrible, unless you enchant the crap out of it.
Dungeon/fortress/mineshaft/blacksmith chests and zombie and iron golem feel sad now
Also a NPC village's crafting bench is sad!
Good luck getting mats from dungeons, fortresses, mineshafts, with no torches. Similarly, good luck downing an iron golem with no gear. Maybe you could find torches in a chest or get a zombie to drop a sword, but you're clearly reaching.
As for the zombies or the blacksmith's chest, that's a little less ridiculous, but DD_Miner beat you to that punch by a good three hours and without the snide meme.

Wood can be turned into charcoal which is equivalent to coal and is also renewable. Whenever I start a new world I never worry about hunting down coal, just lots of wood and I grab all the saplings I can as well.. Then I use some saplings to turn the first piece of wood into charcoal and from there I'm good to go.
With all the things you can do with wood, it's easily the most useful resource. Nothing comes close.

You can turn stumps into charcoal
It's a viable building material
Remember, without wood, you can't make any tools. Without tools, Minecraft is pretty much useless.
