I don't think I ever played single player, except to test stuff.
"Vanilla" Minecraft is pretty lousy. The best add-ons are implemented as server plugins, so even when I want to play alone... I still setup a server and play there.
Once I have my house built and other important structures then I do art, fish, relax and explore. My goal is to build in the world but keep it as natural as possible. Seriously though, if you sit there at night outside your house and listen it's nice and quiet. I like that, no noisy neighbors, no kids running around where they shouldn't be, just peace and quiet.
My signature. Building cities is not only a brilliant time waster, but it pretty much encompasses building something big in Minecraft. And SSP doesn't have griefers (well, other than creepers). And Hardcore mode is quite entertaining.

i just kept getting resource and renovate my fortress. making an animal farm and all that to survive another day.
recently i got really lonely in sp and the mp server i plays on isnt always online. so i got spawner gui mod.
and added some villagers into my fortress, now it looks lively and awesome x3
I might suggest mods that add little interesting elements to the gameplay. Or, if you feel you need it, go big with a mod like the aether (idk if it is updated for 1.0.0) or Mo' Creatures.Also, here's a list of ideas for your house/base/area of operations.
Well, aside from my friend's server being down while he moves... Any bit of lag in smp makes creepers even worse at aiming. They just blow up for the hell of it, no matter how far I move away after they start hissing. I'm going to have to invent obsidian grass at this rate
I play both but the main thing that keeps me in SSP more often is the MASSIVE amounts of bugs/glitches/cheats/hacks and so on in SMP. If these bugs and glitches were to be fixed in SMP, I would never go back to singleplayer...
One thing I do when I lose interest: I go build a new house. This requires gathering materials and that keeps me busy. Also, I try to do better everytime. Also, creative mode is awesome, I build huge castles and skyscrapers but that gets boring so I go back to single player and vice versa.

Yeah I like Single player survival mode. I start a new world gather resources and build stuff. Never grow tired of it. My friend and I will start the same seed and compare notes and screen shots and tell each other where the diamonds are etc. I play part peaceful /part killing monsters, depending on whether I feel like some excitement or whether I want to play for relaxation. I build minecart systems and want to learn redstone more. Challenges are to build good traps, get enchantments and eventually do the Enderdragon thing - but I'm not obsessing about that. I play every day for about 3 hours a day (more at the weekend) - totally addicted. I don't like multiplayer too laggy and I like having my world to myself.
I continue playing single player because I've had too many griefing experiences. I like to build massive redstone contraptions without having to worry about people screwing with them.
Biggest reason to continue playing SSP - I decide when to delete a world. Not the person who didn't pay their monthly server sub / quit maintaining their world / got in a fight with one of their "friends" and burned the entire world / had real world personal problems / or any combination of these.
