At what point one should stop using stone/ wood tools and purely use diamond and iron ones? I am just starting out and was wondering how efficiently to spend these stuff.
What tool material you use is a matter of play style, really.
I mostly use stone tools because I do huge amounts of digging and finding enough iron to make all of the tools I'd need (for example, dozens of pickaxes) would require more work than it's worth (in my opinion). I save my iron picks for mining ores that require an iron pickaxe.
On the other hand, I use iron weapons (for weapons that use tool materials such as vanilla swords and many of the weapons from Balkon's Weapon Mod) instead of stone swords because I don't fight often enough for me to have to worry about frequently breaking (or needing to repair) my weapons. I don't bother with diamond swords because I really don't need them; I do just fine without the extra damage that diamond weapons do compared to iron weapons.
I also use iron armor once I have plenty of iron to spare. I have no issue using leather armor if I'm not going to be doing loads of fighting; I use Peaceful Pack, so I can make leather armor using cloth that is made from string and I can get string by farming flax plants (also from Peaceful Pack). However, leather armor is very weak and I wouldn't wear it into a dangerous place.

Wait a second this is off topic though but how is it realistic to use string to make leather?
Personally I think that brings realism down 10%

Also I'm sorta stingy so I don't like mining more than the 5 diamonds I need to get an enchanting table until I have used it to get a Fortune III pick.
Diamond items with unbreaking III enchantment on them last a looong time so no reason not to use diamond tools especially with that on them. However many people don't know how to or don't like mining/caving so aren't able to acquire many diamonds for regular use.

My feelings are pretty much what Hex said. The first iron I smelt goes to a pick and a bucket. If you mine efficiently, you will find much more iron than the iron you use for a pick, and more diamonds than the diamonds you use for a pick. Once you start enchanting (which should be a very early goal) diamond picks == max profit.
Because I mine so much I use a stone pickaxe but I keep an iron and diamond pickaxe on the side for ore that requires iron and obsidian requiring diamond. I use diamond for armor and my sword but I put them away to use against the ender dragon.
Generally, what I do when I first start out on a new map is make the stone pickaxe and immediately go caving. You can pretty much keep using those stone pickaxes until you get deep enough into a cave where you start finding things like Gold or Redstone (around that time I've usually managed to gather 30 or so iron). Then I'd get my furnace out, smelt all that Iron, and then keep going until I get 3-4 stacks of iron... from then on out I rely on my iron tools until I get roughly 30-40 diamonds from caving (I collect my resources mainly from caving because it uses much less durability than your basic strip mine). Then I move onto enchanting Diamond Tools, hope I get a fortune pick relatively early on. Things then go on from there, collecting more and more diamonds.

Edge, I've seen that you have posted several times about beginning gameplay and first off I'd like to say welcome!!!! I have a few suggestions for you.
In regards to your tool debate I would suggest using stone tools only as long as you have to. I saw you looked up how to branch mine and the different ways to do that so I assume you understand now. So I would suggest branch mining for iron and other resources until you obtain a sustainable amount.
For early game I would recommend using an iron farm! IRON FARM!?!?! WHAT?!?!?! They are NOT hard to build. It requires some doors and some villagers and that's about it. There are two iron farms I would suggest for early game.
One by DocM77 and the Zipkrowd -
Another by NimsTV -
The Nims TV one is easier to build HOWEVER the Docm77 version is more efficient, so decide whether you'd like something easy to build or something that will yield more. Up to you!!
You will need to get some villagers though which IS a pain but is totally worth it once you've done it. To transport the villagers you will need to use rails (That's the easiest method anyways) and they cost iron and gold so I suggest this contraption by ImpulseSV to get as many rails as you need to get your villagers around!
If you need a villager breeder I suggest either

^ I wouldn't recommend doing an iron farm when you're that new to the game, it kinda takes away some of the new mining/caving experience, and getting into breeders might interfere with normal survival play. Not to mention it might get boring if you have infinite iron.
Anyways, if you ask me, I'd start using iron tools once you have enough ingots to make a few tools and still have enough to replace them. If you will be mining a lot, you should get enough iron to still make a profit (as long as you don't make too many tools at once). When you find diamond, I'd personally still use iron picks and stuff for a bit (except maybe make a diamond sword) until you have a few more diamonds, because you may eat your pick without making enough to replace it (somewhat unlikely, but possible). Then once you have more diamonds, move on to using them. You still may want to use iron, for situations that diamonds might not be necessary (such as hoes).
Once you get around 40-64 (or more) ingots then you might consider investing in iron armor if you feel like it, it's the second best armor, and usually the most worth it.
Oh and just another tip that you can take or completely ignore, don't try to find TOO much information when you're new. The ignorance can improve the experience and make it more challenging and fun, at least it did for me.

I don't mean to harp or anything, but when would you consider iron, for example, to be absolutely necessary? Unless you're planning on making tons of hoppers, quite a large amount of railtrack, or maybe go through items extremely quick and need plenty of anvils, there isn't TOO much of a demand for iron. I normally find myself with stacks of iron blocks after a few hours of caving.

It's the speed and durability difference.
It's all down to what one has gotten used to.
Iron and cobble are ok before one gets spoilt by the speed of diamond and the convinience of only needing a single pick even for extended mining expeditions. I used to be like you but using cobble I kept having to stop and craft new picks and even with iron I needed to take 6-9 picks and craft more halfway through.
I used to dislike getting Efficiency when I enchanted picks because I thought it was too fast, now I'm disapointed if I don't get it along with the Unbreaking or Fortune I select.
I still don't like Efficiency on shovels though, it makes it hard to dig with precision.

Well, lots of people prefer diamond tools whenever they're available. I was describing what I do, not what most people do.

You use the diamond pick to search for every ore I guess. And searching for diamond is with it bro it just is!
Ex. Diamond armor tools swords.

Peaceful Pack adds alternate recipes for most (but not all) vanilla recipes that use leather where the alternative recipe uses cloth instead.
