i agree with the OP. i like playing the game with mobs on but dont like stopping every few mins to refill my hunger with rotten flesh. even eating the food makes you a sitting duck for any mob.
pretty much every other poster has been completely negative and said 'oh carry heaps of food on you'. idk about you but no mobs spawn anymore its like a hostile wastelend.
By "extremely efficient farm" do you mean "a dozen wheat planted haphazardly around a hole filled with water"? Because that's about all I have for a farm.
Personally, i love the new hunger system how it is, but i see how some people might not like it. I have no problem working on large projects without starving. One simple way to collect tons of food fairly quickly is simply wheat. Just make an 11x11 fence perimeter around flat land, pour water in the middle square, till the rest of the dirt, and plant. One of those is more than enough food for me. Add an underground hostile mob system for all the bone meal you would ever need.
Edit: If you don't want to worry about trampling your crops, put fences underneath all the farmland.
to me you are sounding like a bit of a ***** to be honest. Hunger is just an added feature with many remidies in the sources or food such as mushroom soup, melons, bread, meat and fish; all of which are renewable. and your point of being to lazy to make simple melon farm which would probably take about 5 minutes compared to your 'massive castle' which would take hours makes you sound like a bit of a hypocrite. i get what you mean about stamina bars but hunger is really not that much of a problem unless you are sprinting/jumping all the time. there are also other ways of playing the game especially to CREATE things, such as CREATIVE or if you would like to mine it all yourself use PEACEFUL. The point of SURVIVAl is to SURVIVE and be more realistic, instant healing is not realistic. other options are using mods to take away the hunger bar or just downgrade to 1.7.3. if you are still having issues with minecraft i guess you better just leave the game. my opinion only.
I just made a large wheat farm. I started with one seed and now I harvest 120 wheat per harvest. When I choose to harvest, I end up with 60 bread. Now I only play on Single Player, but if you are a PvP er on a server, then you need to realize that the PvP environment is a challenge in itself.
Poll after poll has proven that the majoity of Minecraft players like the addition of the Hunger bar. Therefore, the argument that it breaks the game is completely moot. Voice your own opinion, but don't state it as fact.
*sigh* Notch, the very smart man that he is, put CREATIVE for a reason. If you wanna PVP and still build at the same time, be smart. You can set up a hidden base, and make a ****ing farm. It's just a hunger bar, which is part of the realism Notch is implementing. Now, if you retort with something like "0mG N4wtch i5 4dd1ng dr4g0nz and p0t1ons! th4t5 n4wt r34l15tc!" get out. That's merely to make the game more interesting and challenging. You can't just sit in a house all day and expect to have fun you know. Please, have a valid excuse for not liking something.

Where is string. Then find a body of water and volla.. problem solved. Killing a spider or two easily gets the string.

The OP's idea sounds like a smart change.
But his main failure is posting here. He should go to the main website and follow the "Get Satisfaction" link to make a suggestion.
Notch is just trying to keep it as realistic as possible. There is Creative, and Peaceful. It's supposed to be a life away from life.
If you are a troll, and possibly are; everyone please stop posting.
