When you first bought the game, you knew nothing of the mining techniques used for efficient diamond gathering. You knew nothing of mob traps. You also knew nothing of crafting recipes. Games are always at their hardest when you are new to them simply because you don't know any better on how to do things.
A year after playing the game, you pretty much know all the insides and outs of the game and all the tips and tricks to master your environment and surroundings in the Minecraft. You made the game easier for yourself by learning these things. The nature of the game hasn't changed.

The Nether really needs some more work, since, as soon as you get there, you have infinite free food forever. You don't need a farm if you have tons of mushrooms poorly defended by Ghasts that can't even hurt you so long as you can punch their missiles.
I agree. I don't feel the same joy that i did when i first started playing. The beauty of how the world generated, the wonders of what else I haven't discovered yet. The fear of walking outside of my tiny shack inside of a mountain and seeing an army of strange creature furiously attacking me.
Those were the days, when you were afraid to mine any deeper after landing in a dark cave full of evil things without any torches or weapons. Since then Ive been constantly trying to retrieve that wonderful feeling of not knowing anything. Now when its morning in Minecraft and I walk outside and a spider jumps off of my roof to attack me, I don't feel scared anymore, i view it as 'just another spider' as I kill it off with my diamond sword. But back when I started playing, it was different. I'd walk outside with my wooden sword, I'd hear the spider, not knowing what it was until it attacked me, I was scared out of my wits when i started furiously pounding at it with my wooden sword, not knowing how long it would take for me to kill this monster.
In my opinion, minecraft really did change, but it changed to be harder and more complex. Thats why you see more and more little kids giving up on minecraft because they cant figure out the complexity. Back in Alpha days when I started, the game was so simple, and honestly, I loved its simplicity. Because just starting, it already seemed complex, trying to remember the tons of crafting recipes. But the more i played the more acquainted I got with minecraft, then every update from then on, I immediately figured out how the new things worked and how I could use it to my advantage while in game. Minecraft just isn't the same now. The only thing Ive wanted for the past few months, is to have that same feeling of awe as I did when i started playing the game. I hope this got through to some people, that the OP is right, Its us that got with the minecraft thinking, not the game getting easier. Just remember back to when you started. Then you'll understand.
It was easy when I first played it and always has been.
Even with not knowing that creepers explode, even with realizing that spiders can climb walls, even when first seeing a spider jockey, even with horribly inefficient mining and not knowing how to craft most of the items in the game - still easy. Easy peasy. Learned most of this stuff on the first day.
I still love and never get this way about Minecraft because I don't go on the internet and look up how to do everything.
I don't look up the most efficient way to mine, or to farm. I don't make mob traps/grinders. I just play the game. I have never once gotten bored because of that.

and the redstone circuits/stuff are ****ing hard to learn
Redstone mimics real life circuits with a few differences. Not THAT hard to learn if you have an interest in it in the first place.
And this game has gotten easier. Beds DID make it easier, as you could skip fighting mobs. Now, you can go outside again no problem because 1. the lighting is better and 2. the health regen system is good for individual mob encounters, but worse for huge groups of mobs. Of course, this only applies if you choose to play on a difficulty other than peaceful.
