So with the 1.6(.4) update today i reread the list and noticed mushroom farms will be a new options, the only problem will be Mobs, so try making it in a confined dark space and if you can measure the darkness in your house you could probaly make an automatic Mushroom farm.(4 Drops per Day XD) So with this new option, would you rather spelunk until you find 1 or loot the nether.
Mobs are a non issue, they grow in Torchlight fine. And either way you could just make it a glass ceiling with sand on top of the glass. When you want to harvest, clear the sand. The mobs die, Mushrooms harvest themselves, cover with sand and replant shrooms.

Never had a reason to make regular wheat farms, let alone mushroom farms. If I ever need mushrooms for stew, I'll just hop in the Nether and grab some. Not that I really bother healing with anything other than pork or fish though. Far easier and way more convenient.
Ok. I just built my first attempt at a simple mushroom farm:
= wall = sign or ladder placed on wall at head height = water source block
Note that there should be a two high ceiling over the entire thing and that the dirt blocks need to be placed on top of the floor so that there is only one space of air between them and the ceiling.
So using this farm is pretty simple. All you do is plant a few mushrooms on the dirt blocks and then let them spread. When you're ready to harvest, place the source blocks in their spots. All the mushrooms will be uprooted and washed onto the ground by the water. All you have to do is pick them up and then repeat the process. Remember, mushrooms need little to no light, so use little or no torches. Don't worry about monsters spawning, they shouldn't be able to because ladders are considered solid blocks and mobs cannot spawn in spaces occupied by them. Now that I think about it, you may also want to put half blocks on the floor where there are no ladders or signs. Monsters can't spawn on half blocks because they aren't considered solid or something like that.
Anyone know the maximum light level at which mushrooms can grow?
I found a grouping of 24 brown mushrooms growing, not popped, in a desert in broad daylight. First off, how are they growing in full sun, secondly, I've never seen any mushrooms growing in the desert, or on sand anywhere.
