Wow, you went really in depth with the idea. Sometimes, you get posts where it's only a tiny concept or chunk of the entire thing, but this seems pretty well thought through.
I like the concept but certainly not the implementation. I personally think a witch village would be nice too.
For the village, a bridge to the mainland should be added to make it possible for zombie sieges to occur. Of course, villager AI has to be changed so much...
I agree with the part about bridges, otherwise the whole zombie-villager concept would be lost here.

Well I went back to see if I could figure it out and my timing was good as I caught one of them in the act. If there is even the slightest opening in the fence anywhere they'll find it and get out. In this case it was a block I had overlooked (that I used during construction) that they were using to get over the fence. It was up on the roof of a building that had fences all around the top.
With that in mind If this village were to spawn in the swamp and collide/connect with something that allowed for a break in the fences, the villagers would end up outside of the village without being able to get back and thus would eventually get slaughtered by zombies. Granted we've all seen villages spawn in some really horrible spots I'm sure, but something I just thought I'd point out.

Probably makes more sense for the villager ai to be improved than to try and make the villages work with them. Villagers are pretty damn stupid at the moment.
Nah. I think that if one village can support stupid people, multiple can.
I'll definitely support more village styles. And this village looks very nice especially option 2. However, there's one major problem with this village.
There is no entrance or exit to the village. There really should be a bridge to nearby ground. Or perhaps a dockhouse containing a chest with a boat or two inside, some fish, the occasional fishing rod. The dockhouse would connect with a dock via a fence gate, thereby keeping villagers from jumping our into the water accidentally.
This would have a frequent spawn frequency, being in the flats of swamps... And golems do tend to glitch in water. Witch huts also spawn in swamps, but even so, you have my support.

Option seems kinda griddy, in a good way. (I think it would fit for a swamp.)
Option 2 seems more organized.
