This suggestion adds idle animations for mobs. Gosh, I am terrible at introductions. Let's just get to the meat.
All Animals- All animal will eat tall grass with the same animation a sheep eating grass blocks. When there is a waters source, then they will drink it with the same animation. The water at the area they drink will make blue particles similar to the particles in the new fishing mechanics in 1.7. Animals will also run away from moving minecarts.
Pigs- If there is exposed dirt above layer 64, then the pigs will roll around in it. I think everyone knows how this will look like. It is only above layer 64 so you won't be mining and see a pig in the middle of a mineshaft.
Sheep- They will actually run away from wolves instead of running in circles.
Wild Wolves- They will howl at night with their head raised. I can imagine seeing a wolf in the moonset howling.
Tamed Wolves- They will occasionally scratch their ear with their hind leg when they are sitting. That would look quite akward if they are standing.
Ocelots- When frightened ocelots can scale a tree.
Villager- When villager are being chased by a zombie, then they will go to an iron golem and hide behind them.
Villager Child- Same as villager. And they will play tag and hide and seek.
Iron Golem- They will pick roses (posies, I don't care) in the daytime.
The Undead- When there is no player within 30 blocks and they are on fire, they will flail their arms. They will also occasionally stop drop and roll. Close your eyes and imagine that.
Skeletons- When they cannot see a player (16 blocks), they will drop their bow arm so it is simply hanging down. They will also do bow practice on a poor tree.
Creepers- When there is no player within 30 blocks, it will turn white and swell like it will explode, and make a beat with this.
Spider- Open to suggestions.
Witch- They will appear to brew by mixing something in the cauldron in the witch hut with a stick.
Zombie Pigmen- Dip their swords in the lava and snort at each other.
Ghast- Take dips in the lava.
Blaze- Play a dangerous game of fire dodgeball. Upon impact the fireballs don't hurt them.
Wither Skeleton- Knock unsuspecting pigmen off of the fortress walls.
So long as it doesn't unnecessarily hurt performance it sounds like it would be a great addition, just another small flavor thing that would give the game a bit more life.

For a calculator can do math just as well as you, but a calculator can not use math to make the world a better place.

Actually, as long as the animations are blocky, then it will cause hardly any lag. The thing that causes lag is rendering. So if you could see the individual hairs on steves head, then that will cause lag.

Yeah in 1.7 this will be true.
Basically they go over to there protectors (Iron Golem).
