OK, this is no longer about Sousand Beaches & Deserts. It still includes them, (I changed the soulsand desert) but I came up with some ideas to make the nether more livable. (And less boring looking)
~~~Generation~~~
Soul Sand Beaches: Soulsand bordering netherrack around lava lakes.
Lava Rivers: Self explanatory. Rivers of lava flowing through the nether.
Pillars: These are 2x2 Nether Brick pillars that randomly spawn in the nether. They have no point, they just make the nether look a little bit more nice.
Magma Cube Dungeon: Towers of Nether Brick, surrounded by a pit of lava. You must climb the tower, filled with Magma Cubes, and get the loot at the top.
Bone Wasteland: This sub-biome is a desert made up of a new block called bone piles. These blocks are basically a bunch of bones scrunched up together. Breaking a bone pile will give you 4 bones, unless you have silk touch. (You can craft them with 4 bones too) Skeleton Horse jockeys can be found riding around frequently. There are also tendrils of flesh blocks, (they act the same as bone piles, except with rotten flesh) that extend all the way up to the ceiling of the nether.
Rock Candy Ore: This ore would be a hot pink color. It would be striped like nether quartz. When you mine it, you get 3-6 Nether Rock Candy. The candy looks like the Lapis Lazuli gem, but a hot pink. It isn't very saturating, but it restores 3 hunger points. The ore is as rare as gold in the overworld, but it should be a little bit easier to find, since the nether is an open area.
Fire Cactus: You can find fire cactus anywhere on soulsand in the nether. They're red cactus with fire particles coming off them. They will set you on fire. When you smelt them, you get Blazing Red Dye. You can use this like any other dye. It gives off fire particles to whatever applied to. (It will do it with ANY item you can dye) You can grow these on soulsand.
~~~Mobs~~~
Flying Zombies: These Zombies spawn in packs of 3-7. They have red red/purple pants, no shirt, and their skin color is a blueish green color. They behave like normal zombies, except when you kill them, they'll get split into two by the waist, and the upper half will levitate after you, while the legs continue to walk.
Creeper Heads: Flying creeper heads that zoom towards you and explode when it touches you. They only have 4 HP though, so if you're quick enough, you can kill it with one strike. They're a little bit more common than ghasts, meaning you won't run into them too often, but still quite a few times.
Nether cactus's would be awesome, mabye as a rare potion ingredient.
Though a just baren souldsand desert would be pretty useless if there isnt structures and mobs exclusive to it.

Maybe a potion that sets mobs on fire for 3 seconds. Of course, the amount of time would change depending on the level.
I like it, the Nether is too Bland i wish it had more Variety although i support i just wish there were more materials other than netherrack netherbrick soulsand
I know I just thought of something else that's pretty cool. I'm going to add it to the post once I organize it more. I'll most likely give the topic a different name.
But the Nether looks ugly and bland. It needs more. Besides, it only has one biome. That would be like the overworld being only a plains biome.
Though it is a dimension, it is almost a biome. Plus, I don't think it's bland. And, as I said before, it isn't supposed to be "nice". I also do not like the rock candy ore. It is just, weird. I think it would ruin the nether.

Well what other food idea could I come up with? I don't want to make it a fruit you get from a tree, because trees in the nether just don't seem right.

Maybe a type of food you have to dig up. Or some how you can make it out of glowstone. What ever, I don't care.
By 'more livable' I assumed that you wanted to make the Nether 'friendlier'. Instead, you made it more interesting to explore.
I definitely want it to be more interesting, as well as more dangerous, because, as is, it's kind of boring. So I support these ideas, however, you should include the mobs in a MOD REQUEST, not a suggestion, as... I had a really good reason. I'm sure someone else will support me and tell you why, as I've forgotten...
