A while back I attempted to present this idea and it was shot down. I came up with it for all the wrong reasons. So this topic is me giving this idea a second chance. I hope you'll do the same.
Simply put, I would like to see the world height limit doubled.
But, I do not want more room for building up. Hypothetically if the build limit were raised to 500 blocks then I think Sea Level (normally height level 63 if I'm not mistaken) should be raised to 175. And apart from ravines, this would also be the average height level of the lowest point of "ground level". This would mean that to hit bedrock a player would have to dig straight down a little less than two hundred blocks.
This idea is very simple and wouldn't change alot about Minecraft. But it would open up alot of doors.
1). One would be able to remain in one mining area longer than normal before a chunk or group of chunks are depleted of ores.
2). This would leave more room in the oceans for any possible oceanic updates or for players daring enough to build a base on the sea floor.
3). You could hide deep underground on multiplayer servers.
4). VERY HYPOTHETICALLY this would allow for room for more ores (I say very hypothetically because there is no promise of new ores coming to the overworld in Minecraft).
5). More of a challenge to get to ores like redstone and diamond.
6). More room for caves, mineshafts, dungeons, and strongholds.
7). More room for monsters to spawn.
8). X-rayers would have a harder time finding diamonds from the surface (hopefully).
9). Room for vast ravines, mountain ranges, coral reefs, and underwater ruins in the oceans.

Why do people have youtube Minecraft videos that claim to be current version but were uploaded months ago?
I'd support that - flooded NPC villages/mineshafts/strongholds would be very neat. Also, the world is definitely not deep enough for anyone with lots of time on their hands.
1). One would be able to remain in one mining area longer than normal before a chunk or group of chunks are depleted of ores. Downwards? Hardly, most of the cool stuff is built sideways, not up and down. By "cool stuff" I mean lava pools, caves, strongholds and such; they are built down somewhat, yes, but they are most certainly longer and wider than they are tall. Also, it's easier to explore and dig sideways than it is down, not only for the lava and water issues but as a general aspect as well.
2). This would leave more room in the oceans for any possible oceanic updates or for players daring enough to build a base on the sea floor. The sea is rather deep already, most certainly enough for any kind of structure to spawn. You're underestimating the sea level.
3). You could hide deep underground on multiplayer servers. This is not a reason. You can do this already.
4). VERY HYPOTHETICALLY this would allow for room for more ores (I say very hypothetically because there is no promise of new ores coming to the overworld in Minecraft). It has been said that there will be no new tiers. So unless you can think of a use for these new ores, which I highly doubt most people can, this is not a reason.
5). More of a challenge to get to ores like redstone and diamond. Not really. May be easier, in fact, as there would be a larger space for them to spawn.
6). More room for caves, mineshafts, dungeons, and strongholds. Again, these structures expand sideways, not up and down. This looks much better than anything built like a gigantic pillar, and is much more fun to explore.
7). More room for monsters to spawn. Why would this be true? Monsters spawn in air blocks, they wouldn't spawn more often just because the world is deeper.
8)X-rayers would have a harder time finding diamonds from the surface (hopefully). No they wouldn't? An x-ray mod can see infinitely deep.
9). Room for vast ravines, mountain ranges, coral reefs, and underwater ruins in the oceans. You already mentioned ocean content.
Overall, I say this option is better, or one of the many variations on it. Not only because you can select your world height accordingly, but you can also toggle specifically what you want. (Plus combined with what I said, it would be easily accessible, but not to the point where you have a million different menu buttons.) So basically, you are far from the first to suggest this, and far from the best at suggesting it, especially considering you didn't do the obvious and make it a world generation option.
