First off I know that people have suggested boiling water before, but it looks like most of their suggestions didn't have a really practical purpose to them.
Usage
What I was thinking is to make boiling water usable in the upcoming 1.3 update. You could place the boiling water inside a dispenser and when activated, the boiling water would pour down on the enemy from above. I think that the boiling water should not be a stream coming from a source block indefinitely, but rather have aprx. 5-7 blocks worth of water be produced and then dissipate once the water hits a solid surface.

I'm not sure if this could be implemented easily, but if an animal such as a chicken, cow or pig wanders into a boiling water trap and dies, they would drop the cooked variation of the food which they would normally drop. (If somebody could inform me on the possibility of this that would be appreciated. I don't know if there can be modifiers on what the mob drops based on how it was killed)
Benefits
Boiling water will not destroy the environment or your house when it is used on a mob.

A benefit of boiling water over lava as a trap would be that it would not burn up items which mobs drop, therefore making it a good option for harvesting drops and XP from mobs.
Damage
Boiling water could inflict a half a heart of damage for each block of water which comes in contact with the enemy (Even though there may only be 5 blocks of water flowing out, each block would likely hit the enemy more than once if it doesn't move out of the way) [It appears I need to clarify something here. This trap would likely not kill any aggressive mob unless it was already injured. The max damage I can see this doing is 7 hearts worth, and that is if the mob just stands in the way of it and takes it. On the low end I can see this doing about 2.5 hearts worth. This is NOT intended to be a fatal trap to aggressive mobs by itself. With this being said, farm animals would be much more likely to take a fatal amount of damage from this, which I think is just fine and would make it very useful in automated farms used to collect drops from pigs, cows, chickens, etc.]
Recipe
Put your regular bucket of water in the furnace with a bucket of lava to produce a bucket of boiling water. I think the recipe should require a bucket of lava instead of just coal or any other fuel source to make it slightly more challenging to acquire.
Feedback is appreciated. Let me know what you think about the damage and usage and if you have any tweaks.
I guess the only reason I thought it would dissappear is because a small amount is being dispensed so it would just spread out and go away like normal water dows when you remove the source block..

I don't believe it should burn items (I am assuming you mean light on fire?) Just very hot water so maybe it would just do something like scorching grass blocks to turn them into dirt or something simple like that.
I would rather use lava in the dispenser rather than using it to boil water.

Boiling water would also be much less destructive to the environment and possibly your house than lava.

Lava, vats of acid, toxic waste pits, radioactive goo, floors lined with rusty needles, all these seem like deadly nasty surfaces. But boiling water? In some games it wouldn't harm you at all. Players would have to dip their toe in to be sure it could even damage something. That's not realism, that's boring. Spike blocks are a game staple everyone is familiar with, Jeb and Dinnerbone have expressed interest in adding, and could be tweaked to not destroy your precious drops on contact. Add in a little redstone with pistons and you can even retrieve the items without hurting yourself.
Don't put words into my post that aren't there. Boiling water hurts like hell, but it's only the steam that can be fatal and I'd rather see something like the toxic gas block added as apposed to something I can make in a kitchen.

If the mob (or player) moves out of the way of the trap instead of just standing there and getting hit then it would probably take anywhere from 2.5-5 hearts worth of damage.
Now I may not be a genius, but from what I can tell from these numbers, it would appear that not a single aggressive mob would be killed by this trap even if max damage were dealt.

Why wouldn't you design a trap to be fatal? Maiming mobs isn't really the goal of a mob trap unless your farming XP. It's an issue because I don't see a reason to include a weak damaging block in the game. It's like wanting to add copper tools in between stone and iron for no other reason than to have a tool with properties in between stone and iron.

I don't have a problem with criticism, it is the manner which you went about it. You come off as sarcastic and arrogant. While you may not be simple stating you don't like it, your means isn't much better. I am fine admitting that this isn't the greatest idea, but that is what these forums are about. Probably 95% of the things posted on here are not good at all and another 4.9% are actually well thought out and people like them. I do think it is a good idea to limit how much water comes out or else it would be a really easy way to kill anything that comes through.

Also, I do know of all the Mibecraft blocks and most entities. Not including the silly Ranas and Black Steves which I find sort of racist.
