Well... this is not what I expected to find at all. Not that that's a bad thing,as I was expecting a 'Z. Pigmen now live in towns and have chests filled with post-diamond tools' thread. Anyways...
A few suggestions:
1) When the bull-men attack, have them swing the exposed arm bone, like they are ether clubbing or stabbing you with it. Also, allow them to charge if the player is far away, lowering there heads and closing in for a single, high-damage attack with their horns.
2) Be careful when you say they drop ANY item. Remember, diamond blocks and bedrock would both be on that list...
3) the mystic scares me far more than the tormentor, and you clearly intend it to be the other way around. I can easily slay the tormentor in a number of ways, be it bow and arrow, letting him fall into a pit and pounding him from above, or some other underhanded trick. For that matter, he still falls with only a couple well timed swings, so I have no more need to resort to such tricks than I do when hunting iron golums. The mystic, on the other hand, has PK punch. His health will allow him at least one of these insta-hits that may well knock me out of my sniping post or other advantageous position into a vulnerable location. Basically, the tormentor's melee powers are worthless without means of reaching a ranged player/ player with good timing with his sword.
You could make some armor that is resistant to their attacks so you can last a little bit longer if you are forced into a close corner fight. Otherwise I think this is brilliant. I have only ever used the Nether as means to collect the shards you see on the ceiling to make my laterns in the main world.
Eviscerator Health: 22 Hearts Damage: 2 Hearts Abilities: +65% Movement Speed, Quick successive attacks, the Eviscerators have both arms stripped to the bone, however these bones are longer and are coated in some form of steel, allowing Eviscerators to quickly shred their opponents in a matter of seconds. Drops: Extra 2-3 Exp orbs, 1-2 Iron ingots
Colossus Health: 50 Hearts Damage: Fall Damage Special Attack Abilities: -80% Movement Speed, 5 times the size of Nether Villagers (similar to the Giant mob), Only spawns if there is enough room outside the cave/village as a demotivatior to attacking the village. The Colossus, once hostile, will stay permanently hostile even after player's death. The Colossus' only method of attack is a power stomp which will fling the player and other mobs into the air, attempting to kill said mobs with fall damage. The player can use this as a method to access remote areas to attack the Colossus. Drops: 10-15 extra exp orbs, 2-3 Blood Diamonds
P.s. If you plan to incorporate the Colossus, give him distinguishable features, such as curved horns, Ghast Flesh pants, a Pigman Skull belt, scars, etc. to show him as someone you wouldn't want to mess with. Same goes for the Tormentor
Village Hunter Specs: Health: 8 Hearts Damage: 6 Hearts Abilities: +125%-150% Movement Speed, Attacks you with a bow using special arrows tipped with blood diamond. This mob fires its bow once every 3-4 seconds. Hunts Zombie Pigman with in 50 blocks of the cave entrance. Features: Is colored in a simmiler way to the zombie pigman (maybe a little bit darker in texture.) They wear leather armor chestplates covered with bits of netherack. This helps them stayed camouflaged in their nether environment. They also where specail shoes that make them dead silent (like creeper.) They also where a pig bone neckalace to show their amount of kills. Chest: They have mostly rotten flesh, bones, and gold nuggets in their chest. They can have leather armor, Silent shoes, and blood diamond arrow tips in their chest though. Spawn Chance: 25% Drops: 0-2 blood diamond tipped arrows, 0-1 bones, and/or bow (rare drop.)
*You can make blood diamond arrow tips by first crafting blood diamond into blood diamond shards (9). (Note: The shards are made just like gold nuggets from a gold bar) You then place the shards into the crafting table with arrows to get arrows tipped with blood diamond. Hint: 1 shard can be used to make 4 blood diamond tipped arrows.
Why is everyone complaining about one-hit-kill mobs.

No, there has never, ever been a sandbox game with a story or ending... except Grand Theft Auto... and Saints Row... and Red Dead Redemption... and Crack Down... and Assassins Creed...

You totally weren't talking to me, but I think a dark/swampy green would be cool.

On a entirely separate note, spaghetti

Sadly, the Rampant already has that color.

An albino minotaur hunter? Eh... How about dark red, but with chest markings?
Hmmm... It's nice too.
