Why not just receive seeds when making a pumpkin into a jack-o-lantern? The jack-o-lantern would be the result, and in the place of the pumpkin are 2 seeds. Why, you ask?
1: It's more realistic
2: It gives a reason to craft jack-o-lanterns instead of just using glowstone.
3: You get to keep (in a sense) the pumpkin afterward.
4: To slow pumpkin production, which I feel is too fast. I mean, 4 seeds per pumpkin? Kill 2 skeletons and soon you have an army of snow golems.
I'm pretty sure the original idea behind pumpkins was that they would be crafted into jack-o-lanterns. I can see this maybe being on their todo list already.
I see it's perks, but I think it shouldn't happen, at least part of it. I use the jacks all the time, and the slow regeneration is still better than non-renewable glowstone. However, I think the crafting should stay as it is, but the pumpkin-to-jack-o-lantern crafting should result in the production of a single seed.
1) Realism isn't strictly necessary in Minecraft. It's no reason to mess with the current crafting system.
2) Glowstone isn't renewable. Jack'o'lanterns need to break when the block below is broken (they currently just need the block to be there at the time of placement) to keep glowstone useful.
3) Losing the pumpkin can be considered an opportunity cost for the seeds (balancing mechanic) but it's not that big a deal either way.
4) Wouldn't it be easier to just change the number of seeds from 4 to 1? I don't really see the problem with the current number, though, since the pumpkins take time to grow and more pumpkin plants mean more maintenance.

Well, when you craft cake, the buckets, a different item, stay in the table, so it shouldn't be so hard to implement this.

Pumpkins stack, unfortunately, so there are complications.
