A copper golem could be some kind of customisable golem, you would be able to shape it like most mobs in the game (Example: a copper dog golem) You could also be able to create its AI, and it can do anything a player can (Example: A copper golem that attacks anything that gets to close to your house.) I think that this would be useful for everyone because it is so versatile. If you are someone you likes auto-farms you can use it to make your farms easier. If you are an explorer you could have a copper llama that carries all of your gear and follows you around. If you enjoy fighting mobs then you can bring along a copper witch that heals your dogs so they don't tragically die. I think that they should have around 20 health, same as a player, and damage is naturally 5, but if they have arms then you can equip it with a weapon or tool.
...It could work, but it would be a major game changer, and balancing it would be quite a challenge. I also wouldn't want such a thing to be able to replace all the existing creatures you would normally use- (As mentioned in the original OP, llamas, wolves, etc.) I can see some sort of copper golem, but I feel like it would have to be at least a little specialized to avoid being redundant.
...What about a player made turret thing, made with shulker shells, copper, and a dispenser? That can be filled with projectiles and automatically fire on targets of your choice? ( I really can't get over this idea.) Yeah, there's potential.

Sounds like a cross between an Education Edition's Agent and an iron golem, sure.
