Using dyes can be frustrating- there's no unified system for dyeing things. (That is, dyeing terracotta is different from dyeing wool, you can't dye most colored blocks once they've been dyed, etc.) One way to deal with this would be to add Ochres- a processed version of dye that can be applied direclty to things... and could also be used for fun.
-An Ochre is made by crafting eight dyes with a bottle in the center- you can also combine equal amounts of primary colors to get the usual secondary colors. The Ochre itself can be applied directly to dyeable blocks like wool and terracotta, beds and leather armor stands, etc. One bottle has thirty twoish uses.
-Drinking an Ochre causes your character to get a status effect that changes their color- a feature that could be useful for multiplayer games. In addition, Ochres can be combined with gunpowder in a brewing stand to make splash ochres- which dye a radius of dyeable blocks when smashed, and give anything they hit their color of status effect. (Also a fun feature to play around with.)
Mmmm... half support. As far as dyeing stuff, I don't think this is really necessary ever since flowers became easily farmable, and the differences between items aren't honestly that big--worse comes to worst, you can use the recipe book to help you figure it out.
Now, as far as using dyes + potions to create "paint bottles," I like that idea. I don't know about allowing them to dye blocks, because that could turn very trolly, but dyeing sheep and other players would be fine. It'd be a neat little tool for multiplayer as you say and could be good for stuff like paintball-style games.

I find current system satisfactory in general, at most I would rather see an option to remove dyes from blocks using water or chemicals (like coal).

I can think of a couple of Mini-games that could have 'paintball' style gameplay as mentioned by Puffy_Pony - as said the idea of Drinking dyes is not what I like but having a splash potion+dye so other players can throw them at each other I do like..

- I would like to see some device/block that could automate converting flowers into dyes
Since most Dyes are in a powder form my suggestion is something like a combination of a grindstone & brewing stand - Let's call it the 'Dye-Station'.
You can place bottles in the base & add 1 or 2 flowers (or dyes) at a time
- flowers are 'ground up' in the device to make the Dye
(Dyes just 'pass through' the grinding process)
- The 'Dye-Station' can have 2 inputs for items (perhaps a hopper attached to each side).
Same type Dyes produce Base colours (eg Poppys = Red Dye)
Different type Dyes = Secondary Coloured Dyes (Poppy+Daffodil=Orange)
- The finished Dye ends up in the Bottle(s)
In cases of non-flower items/dyes (ink sac/cactus/bonemeal/cocoa beans) - You'll HAVE to convert the items into Dyes beforehand & then add them to the Dye-Stand
I would also would like to see Coal added to the Dyes.. It's seems very hard to get Black dye at the moment (either by Squids or Wither Roses), but by Grinding up Coal you can get fine black powder that could also be used as black dye
