I know we have chests and other ways to carry stuff, but what about rucksacks/backpacks. If we go off in to the wilderness for miles or to the nether, I guarantee we will run out of stuff, especially if we are building. If we had a backpack we could carry lots say same quantity as a chest.
Ah, the old backpack suggestion. Here's my 2 cents:
You haven't specified how it's crafted. (You haven't actually specified much, just "lets add backpacks" and a reason why.) Now, we already have shulker boxes, which are pretty much the same (albeit less convenient to use.) This leaves two possibilities: (You did say that it'd carry "about as much as a chest".)
If the new backpack is cheaper than a shulker box, it'd make shulker boxes redundant.
If it is more 3xpensive than a shulker box, shulker boxes would make it redundant.
My idea: Instead of adding backpacks seperate from shulker boxes, why not use shulker boxes as backpacks? To do so, equip the shulker box in the chestplate slot, and a "Shulker Box" section above your inventory but below your armor and crafting grid will appear with 27 more slots. These are the shulker box's, and if the shulker box is removed, the extra slots will disappear and the items inside will end up in the shulker box, just as if it were placed and opened.
I'm not sure if backpacks would necessarily make shulker boxes obsolete. If the backpack just added, say 6 new inventory slots for example, those six could be used to carry more shulker boxes.
And the backpack would provide much less inventory spaces, but would not have to be placed in order to access its contents.

You have to consider that most players with many shulker boxes choose to store them all in Ender Chests. You lose two slots (a silk touch pick + the Ender Chest) but gain 27 chests of storage in exchange for those two slots.

That is a good point. So, it could just be a way to increase inventory space for early game players. In later game, it wouldn't be as useful, but 6, or how ever many slots it has, is still more than going without it.
Well, the aesthetic and look of a backpack could improve the survivalist feel of the game.
This isn't a functional use, but it is a bonus. The argument that backpacks are useless because there are shulker boxes is flawed, because it ignores how they can be used in conjunction.
Even if the backpack just gave 6 new slots, if each of those slots carried a shulker box, that's another 162 available inventory slots. That's 10,368 more items capable of being carried.
Oddly, this means it would be one of the few items that the player could potentially craft in the first minute of gameplay that actually becomes more useful towards endgame.
Before the 1.11 update, before shulker boxes were added, adding backpacks would've made a lot more sense, but now we have shulker boxe which can be used with an ender chest. There are 27 slots in an ender chest so that mean you can have 27 shulker boxes in an ender chest, each shulker box has 27 seven slots in it. Having a mobile storage system is pretty easy now.

I feel like this isn't the best argument. Yeah they would look nice, but why use backpacks when you can carry an enderchest with 27 shulker boxes in it? Plus, if backpacks were added, no one would use shulker boxes anymore, making them kind of obsolete. Think about it. Why would you use a shulker box that you have to place down and break, when you can use a backpack which doesn't need to be placed down?
I was just noting that it would also be aesthetically pleasing, and functional. Also, you could use an ender chest and backpack.
I was just using 6 slots as an example, maybe a higher tier one could have more so they would be more comparable.
If not, then the backpack provides 6 or so constantly available inventory slots without requiring it to be placed, opened, and broken. But, if the player wants even more slots, then yes, they'd have to go through that minor hassle.

If backpacks retained the items inside when removed, that means you could store items at six times the current density achievable by filling a shulker box with backpacks or vice versa; furthermore, it would be possible to put shulker boxes inside backpacks inside shulker boxes inside backpacks et cetera, which would achieve theoretically infinite storage densities.

Well, I assumed that it was obvious that backpacks would only hold items if it is worn. I probably should have stated that more clearly.
And, the player can't wear a brown shulker box on their back...
