This is not a mind blowing thing, but it would help with a minor annoyance. My suggestion is that when breaking a sign, if you hold down shift while doing it, the sign retains the text on it.
Thoughts: sign with text would drop as a separate 'inscribed sign' item. When held in hand, it would be more like a map, actually showing the text on it.
Placing inscribed sign by itself in crafting grid would produce a stackable blank sign.
I like this idea. It only really affects stackability if you hold Shift while breaking it, and I would imagine the number of people who need to break a sign while holding Shift but don't want to retain the text is incredibly small.

Thanks guys. I don't worry about stackability because I see this most useful in the narrow case of wanting to move an existing sign a few blocks here or there without re-typing the message. And if someone does want to collect signs... well the inability to stack is just something they would have to contend with, much like carrying weapons or written/magic books.

The only common instances that occur to me is breaking signs while on ladders/vines/magma blocks/…
Still rare enough that it doesn't seem like a deal breaker.

Not sure the crafting option is needed, simply placing and breaking the 'inscribed sign' (without shift) would seem sufficient. (Slightly more time/labor intensive, but not likely to be a common occurence.)
The ability to read the text of a sign in hand (probably desirable if moving more than one at a time) would also make the idea fulfil at least some of the functions of the various 'note' suggestions that keep being made.

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
you can already do this in creative with ctr+middle click, and when the lectern comes out you can replace signs with books that can be easily moved without losing text

This would present issues with sign stackability.

We need this, since it isn't even a minor annoyance. It is beyond annoying.

I don't even play Minecraft much anymore yet here I am on the Minecraft forums for some reason...
Signs when broken should always drop inscribed signs. You should be able to clear inscribed signs by putting it inside a crafting grid.
