I thought of something special, that's never been done before, for someone I feel deserves something special, for everything he's done for Minecraft.
This guy has stepped out of the Minecraft spotlight for quite an extended period and is sorely missed. He's someone many identify with the Minecraft brand.
At one point, he used to play with family a lot and was a lot of fun to be a fan of that series. His first Minecraft videos were tutorials, that ushered in a ton of new players, using his well versed commentary and editing. Many say he's the reason they started playing Minecraft.
The person I'm referring to, PSJ. I feel he could and would like to be reinvigorated to the game. He loves adventure, excitement and role playing.
I'm not 100% sure the reasons, he is just not releasing many videos on Minecraft as before, I can only speculate.
On his channel, there's many other games he's started a series on, I just really miss seeing him playing on Minecraft. I felt that was his element and really enjoyed it.
One speculation is there there is not much for him to go back to. In the past, he's put so much energy and thought in to it, trying out new series to keep things fresh and maybe, not wanting Minecraft is sole series he's known for, perhaps the audience wasn't as strong when things started changing in his life.
That's where I was hoping Mojang could come in. It's been over half a year since he made an episode in his Paul Plays Minecraft series.
Maybe something can be added to give him something enticing for him to come back to and could turn in to a series. If it's something that gets him excited about it.
Updates and changes, I know are a constant and comes at a pace that keeps everyone constantly busy and little time for anything else.
I really like the direction Minecraft is going, some may not agree and prefer the way things were before, but the changes I see, to me, all fit within the Minecraft universe and make sense to me. I see it as a slow and steady change to make the world more vibrant and interesting and fun and more importantly add more adventure.
I would love if Mojang could do a special, exclusive update for PSJ, kind like how someone picked for screener gets the first peek of a movie before it's released.
Perhaps via some special world seed/custom world map, pre-loaded with additional secrets planted around the world map and update changes that no one else would know about. Paul would be the only one to try it out.
Another interesting way to explore this custom world would be if it were laid out as a quest/adventure map, that requires exporation the world map to discover changes.
Instructions, if any, on what to do, or what to look for, could be as descriptive, or as cryptic as desired. Done in a way that is rewarding when something is discovered, ideally like the old way updates were done, changes to the game were a mystery, you just have to find out for yourself.
So it's like an update that's also an adventure/quest game, with added elements as secrets for Paul to find while exploring. With some addition being changes that would make it to the next update and some just being for show. I could see it as feeling like a whole new game for him and just a fun experience and I think it would reinvigorate his fans and pull in new viewers to play the game.
Anyways, that's about all the spewing I can think of. Figured it was worth sharing, especially if something may come of it.

It would be great if you could actually tell us details on what you would like to give Paul, rather than just telling Minecraft to make something for him. I do think it's kinda pointless for Mojang to add code that only one person will ever use. If we're making something to thank Paul or anyone else for their help in bringing Minecraft to where it is now, I think it would be better to either...
1. Put their name in the credits.
2. Add an easter egg in the form of a mob skin or something else that can be accessed with nametags or similar items.
3. Give them a special cape or some change to their player skin that makes them recognizable on a server or somewhere else.
A special map generator seems like something the whole community deserves to know about, but even if Paul never showed it off on his Youtube channel, the whole community will inevitably know about it as soon as a new version of Forge is developed. Keeping it a secret would be just a little pointless.

It's fair to assume that he's just burned out of the game. Even if an update specifically for him did come out, it's not guaranteed to make him start playing again. Whether he ever stops being burned out is unknown, but being practically forced to play by an update just for him could do the opposite effect.

Your suggestion made me think of the possibility of unlocking an achievement in-game, that the achievement title is a quote, or phrase of his.
The other is a nametag like "Spy Chicken", for example, would change a chicken mob skin to one with sunglasses and a fedora.
They could also be an update that gives a nod, or mention to him in the notes.
On my initial suggestion, the thoughts on those were new types of relics/artifacts, temples and shrines, cartographer maps, possibly new types of mobs, like human-type mobs and new types of vessels.
Improved NPC AIs, more ways to interact with NPC Villagers with gesturing and Villagers that perform more elaborate tasks, acting independently, or gestured though player command.
Inclusions of celestial, or geological events and treasures that can only be triggered by certain events. With new types of instruments/tools to locate hidden treasure.
Some custom made inclusions that wouldn't necessarily be a part of any update, like RPG elements added for a custom game, like NPCs and new types of mobs that would be a part of quests. Custom made landmarks/landscape to mark certain areas.
