Secondly, the blocks available for pathing would be limited to any block that generates in the world OR which is made solely with those blocks.
Thirdly, create multiple styles of path block texture. We could have the original version for a rustic/rough trail, we could have at least one and maybe multiple types of brick-style paths (large brick, small brick, bricks laid out in various designs, etc), a path with a finished edgeway/curb, a path with scattered stones (ie, flagstones), etc. This COULD be something specific to the original block, but perhaps it would be better to attach a mode menu to shovels/picks/axes (this would be best with a large variety of path types) or chain the styles together via multiple rightclicks on a path block (best for a small variety of path types). Probably something that can be keybound by preference, maybe P by default.
Wouldn't this conflict with the off-hand slot uses, or would the off-hand functionality override the path-placing functionality (or vice-versa)? If I have a pickaxe in my main hand and torches in my off-hand slot and right-click on a stone, would it place a torch or place a path?

I'd imagine it would be the same as what happens with a shovel, anything in your off-hand takes priority
These are all the blocks in the Building Blocks section of the creative inventory that are the basic cube shape.
The suggestion says that all blocks that generate or are directly crafted from generated blocks can be made into paths. However, some of these blocks still seem a bit odd. Let's remove some obvious ones. We probably don't need path blocks of ores, sponges, bedrock or blocks that emit light. Oh, and we don't need to keep dirt because it already has path blocks.
This is certainly a lot more sane, but there are still some odd ones for path blocks here. I don't think it's necessary to have wood planks or wood log paths. Unless you plan on using those blocks as "flooring", an outdoor wood path doesn't make sense because the wood would wear away. Let's also remove bricks and cobble, because those blocks can already be used as paths without any kind of change needed.
If we're going to make Terracotta paths, we either have to make every block have a path or none, and personally I don't really see the point. Let's also remove variants of sandstone, because most people will only look at the top of a path block anyway.
Alright, we've whittled it down to these few blocks. Most of these are okay choices, but I can give reasons why each of these blocks don't really need a path.
Stone: The path for stone is cobble and/or stone bricks, in my opinion. If you want another variant of the stone brick texture, why not suggest a few new stone brick textures?
Andesite, Granite, Diorite: Diorite is really ugly, and I don't see why anyone would use it. Granite and Andesite might be okay for paths, but I feel like the default texture is already good enough for paths, seeing as it's almost a combination of a stone texture and a cobblestone texture.
Sand: When you step on dirt, it compresses. Sand doesn't do that, it just piles around your feet and makes it hard to move. I'm not sure what a sandy path would look like, but I don't see why sandstone isn't good enough for this purpose.
Gravel, Sandstone: Isn't this already a path? I don't think we need to change these.
Obsidian: Considering how hard it is to mine, I don't really see why I would want to build paths out of it. I would just be a waste of time when better black blocks exist.
Ice: This makes no sense.
Snow: I would rather have the ability to interact with snow layers. When you right-click a snow block with a shovel, it should give you 1 snowball and should turn into a 3/4 snow block. (Because snow blocks are created from 4 snowballs.)
Clay: This one might be an interesting idea, but clay is normally too rare for paths.
Netherrack: Of all the blocks left, this one sounds the most plausible. Sure, soul sand exists, but that's a special block for slowing down players. The Nether is a hard place to traverse, not just because it's filled with deadly mobs and lava, but it lacks a lot of landmarks. Path blocks for netherrack would allow the player to more easily find their way back to their Nether Portal.
Soul Sand: While Netherrack might be promising, I think Soul Sand itself doesn't need to be more pathlike. Plus, I already discussed why Sand paths don't really exist.
Endstone: This one could work for the same reason as Netherrack, except for the fact that The End is made up of islands separated by huge void gaps, so I don't think this would help the player find their way back home.
So, yeah. I don't really see the need for path blocks other than dirt and maybe netherrack, especially when so many other blocks make better looking roads.

I don't think this needed. If you want to make a brick road, use brick blocks. Dirt paths are around because Mojang wanted Villages to have roads that wouldn't be farmed. Originally the solution was gravel, but that didn't work very well and we got paths. Also, the dirt path texture is unique. These paths would just be 15 pixel variants of their originals. Lastly, dirt paths make sense (digging up the top bit of grass to make a path). Using shovels to mine up the top bit of wood does not.
