So, I think we can all agree that the end is really boring and plain. The end should have more mobs and more blocks.
MOBS:
I have a few mobs we could add like a Watcher where it would be like a zombie pigman, where if you hurt it it'll become hostile for a bit, the Watcher would look like this: an eye as a face, a dirty kind of yellow and orange skin, it'll have a iron sword, and purple "hair." What it will drop: It'll drop it's head and a ruby and it's sword. The other mob will be a Ender Slime when it hits you you get the blindness effect for 10 seconds. What it'll look like: It'll look like purpur blocks. What it'll drop: slime balls and blindness potion.
How these will benefit players:
Well the Watcher would drop iron swords for the players and the Ender slime drops blindness potions.
BLOCKS:
The new blocks will be ruby ores, ruby blocks, and the sulfur block. The sulfur block would be a nice building block.
How this will benefit players:
These will add more variety to players builds.
Now you might be asking why do we need the rubies. Maybe some armor but you get to decide, Ruby Armor? Yes or No?

Could you draw picture instead? Regardless, this seems to fit with the End well. My only question is how often will it spawn. If it is rare or structure only I will support, but I don't think these should be as prevalent as Endermen.
What it will drop: It'll drop it's head and a ruby and it's sword. These drops don't seem that useful. If they don't have useful drops, watchers risk becoming a nuisance that everyone hates, like silverfish.
The other mob will be a Ender Slime when it hits you you get the blindness effect for 10 seconds. What it'll look like: It'll look like purpur blocks. This is the most cliche mob in the book. This mob type has already gotten a variant, why do we need another. Plus, a purpur slime would look terrible imo.
What it'll drop: slime balls and blindness potion. Like before, this bring nothing new to the table. Why blindness potions? How did they obtain them?
How these will benefit players:
Well the Watcher would drop iron swords for the players and the Ender slime drops blindness potions. These drops are useless. They should drop something unique that helps flesh out the End more.
BLOCKS:
The new blocks will be ruby ores, ruby blocks, and the sulfur block. The sulfur block would be a nice building block. Sulfur's ok, but I think it would make more sense in the Overworld or Nether than End. I dislike the idea of rubies, but I do agree that the End needs an ore.
How this will benefit players:

Now you might be asking why do we need the rubies. Maybe some armor but you get to decide, Ruby Armor? Yes or No? No. At this point I don't think another armor tier could be added to the game. They would be too OP, and if you try and if you give them a weakness (as I have tried before) everyone will say it's useless.
I agree that the End needs to be improved. However, besides the watcher's apperance nothing here is original. Try and come up with more unique ideas to make this thread stand out from all the rest.
just criticism and no ideas are here, so i have some, the ore be should like in the aether mod, gravitite , that would explain how the end is a dimension with floating islands. this is probably not original, but at this point nothing is original, gravitite boots will give you jump boost, and you can also get a powered elytra. if you replace the lapislazuli with the gravitite in the crafting table you get better enchantments and maybe a floating armor, with gravitite you can brew levitation potions!! yay, with the levitation potion you will be able to craft levitation arrow, this arrows will no be affected by gravity, and will give levitation to the victim
More armor could theoretically be added if the existing armors were properly scaled instead of going from marginal to invincible in one tier.
Honestly, I'd love to see many more armore added (ruby, emerald, ameyest, bronze). I just don't think the game can currently handle more armors, unless as you said there's a major progression overhaul. And since this thread is about improving the End, not progression, I don't think ruby armor should be added this way.
Aside from being rather vague and poorly thought out, I have two additional concerns:
a ) The end has already had one major overhaul. Another is not needed at this point in time.
b ) Rubies are red and would clash with the other colors of the end, like the purple, which would make them look tacky and even less fitting than they already are.

The end has recently been amped up by a lot. It used to be just one island with giant obsidian towers, endermen, and a dragon that just throws fireballs at you. But now, there are many tiny islands, shulkers, and the enderdragon has many more attacks. Additionally, they added a new structure practically turning the end into an entirely new dimension that can be explored practically as much as the overworld. They added a fruit that can make you teleport, a mob that can throw you into the air, a chest that doesn't lose its contents, and more.
The point of saying all that was to show that the en is not "really boring and plain". It is no more "plain" than the nether. In fact, it has more variety than the nether because it has a boss with much more attacks and bigger structures with more loot.
Also, the watcher does not sound like his colors would fit in. And the ender slime sounds like a copy of the regular slime. We already have one of those for the nether, so adding this one would be redundant.
New ores seem to never get support, and the ones that you suggested do not fit into the end at all.

To download the other ones you need to make a folder in the versions folder for minecraft and put the client and JSON file for the versions in there. They all need to be named the same aside from file extensions. Once you do that, you will be able to choose that version when making a new profile with the minecraft launcher.
