At first, I had the idea to add banners to elytras until I realized that capes did the same thing! So, how about having aesthetic trails of particles behind someone flying an elytra?
Crafting and Obtaining
Particle elytras have tags like fireworks on their different particle trails, but you can have up to two. Here are the variants listed below, with big and small particle variants:
(Note: These recipes are expensive. They use scarce and difficult-to-obtain items, which adds all the more satisfaction to getting a particle trail. But do you think the trails should be so costly? Comment below!)
Stars
This particle trail is made by crafting an elytra with a nether star, along with a dye to modify the stars' color.
Bubbles
To make this particle trail, craft an elytra with a wet sponge and a dye.
Creepers
This one is obvious. Put together an elytra, creeper head, and a dye.
Black Thing
Since the notch apple is not survival obtainable, this particle is made by adding a notch apple and a dye to an elytra.
Fire
This trail is made by crafting an elytra with an ender crystal and a dye.
Particle Density
There are 3 particle modes:
Heavy:High concentration of particles in one small, defined trail. (craft elytra w/ blaze powder)
Light: Low concentration of particles, spreading far behind the glider (craft elytra w/ ghast tear)
Medium: Moderate concentration and spreading of particles. (craft heavy elytras w/ ghast tear, light elytras w/ blaze powder)
This is my suggestion on particle trails being addable to elytras! Please share your thoughts below!

Of course, it's not all chance; at its core, Battle is about triumphing and defeating other players... by kicking them out if they win to make yourself feel better.

The enchanted golden apple is still obtainable in survival, it is just much harder to get one because since 1.9 you can no longer craft them. Now the only way to get one is from dungeon chests.

Golden apples (enchanted) can be found in 2.6% of desert temple chests, 3.1% of dungeon chests, 1.4% of chest minecarts in abandoned mineshafts, and 3.1% of woodland mansion chests, all in stacks of 1.
Since Notch Apples are survival-obtainable, I'd suggest changing the Mojang-trail to that. Dragon eggs are a bad ingredient, since there is only one without glitching/cheating/creative moding.
How far do these trails extend? Are they glowy, like fire-particles that you can see trailing at night? What happens to the particles? Do they vanish? Fade out? Float to the ground?
