Wouldn't it be nice to be able to ride a sea creature?
I don't care if it's a dolphin, just something fun for the heck of it.
I can hear it now......"BUT...people won't ever use boats anymore".
Not true, I used just about all the land transports. Well...I don't use boats anyway since getting DSIII on my boots and since I've been searching high and low for Ocean Monuments. But in different circumstances I like different modes of transport. I like mules and horses but also have an extensive mine cart system.
Here are some suggested mechanics, thanks to VolcanoBomber454 for asking for details to help me flesh this out.
Dolphin Riding
Movement
Stats equivalent to a horse or mule in terms of speed, health, and so on.
I imagine it would work a lot like swimming in some ways, standard WASD, sprint, and jump to climb toward the top. Since Dolphins are mammals who need air, perhaps they could surface and dive automatically, making a "straight" path look like a sine wave of jump and dive that mimics what dolphins often do in the real world. Tie the dolphin's air supply to the player's air supply including enchantments so that the dolphin surfaces as the player has need to breathe. Standard tricks would work (bucket, torch, etc).
Three additions I would make:
Dive — rather than falling in the water based on normal physics, there would be a dive that allows a player to rush toward the bottom. This would be handy for getting to the bottom more quickly, also it would be useful in situations when you'd like to evade something (guardian lasers?).
Jump — Dolphins are cool to watch because they jump. Wouldn't it be fun / interesting / potentially useful if they were able to jump out of the water like a horse, allowing the player and aqua-steed to jump obstacles? A double jump would allow the dolphin to ride the surface, double jump again would engage normal movement habits again.
Ramming — I mentioned the sprint above. This could be used to ram targets — squids, guardians, players, boats to turn them back into the item, and so on. It could do 2-3 hearts in damage and operate kind of like a lunge that carries the player through the to the next square beyond the target's current position and push the target one square to the left or right, or back one space if it's a straight on hit.
Taming
Dolphins would be attracted to raw fish or salmon (in the way wheat attracts other ridable animals), and tamed by mounting them and saddling them the way we would any other animal. Once tamed, they would regain health similar to other mounts and healed using fish or salmon (cooked or raw). Perhaps this could make use of a new saddle that's found exclusively in ocean monuments.
Dolphins can be leashed and posted.
Once a dolphin is tamed, it tries to stay near in a similar fashion to wolves as long as you're within 120 blocks. It would be great to have a "whistle" feature to call them if they're in range. Maybe an interesting feature would be that they try to follow on land.
Notes
I could see other animals added like seahorses, porpoises, maybe an achievement to tame an elder guardian in some fashion.
I think this could be a fun mechanic that would allow for some unique opportunities for players.

There's not a great way to move animals from one place to another. I wouldn't mind being able to "store" an animal in my inventory.

Dolphin would have more sense like a short range fast acuatic animal of battle, instead a transport fast animal with a big range.
The problem is that dolphin can "override" to current boats (make obsolete to these), and such thing must not happen, otherwise would be an unbalanced or overpowered addition.
Then dolphin must not serve to transport animals and must have a short range (ie, they can swim fast but they must will get tired each "x distance of sprint" losing much speed), for not make to boats obsolete.
An extra property that could have dolphins, to give a different use instead of be similar to boats, is have the ability of swim underwater (as a submarine) with the player and fastly, plus have a permanent critical damage (as with horses) acting like a vehicle of acuatic and subacuatic battle.
There are circumstances where a boat might be better or where an animal might be better. I can break and transport a boat, probably not a dolphin. It may be that a dolphin swims faster in certain circumstances, slower in others.
Obsolescence isn't something I'm worried about because (as I stated in the OP) there will always be some who prefer one mode over another, and taming a dolphin isn't something you can do in early game whereas making a boat is.

I like it. Added details which are nice. I suggest that you can tame a dolphin in one try with a clown fish and would get a achievement like "Found Nemo... or lost him". I have possible textures that you could use if you want down below in the attachments.

You should be worried about it. Things like "a cheaper and powerful version of something" are not well-received in the community.
Things as the alchemist villager, the lava boat, dragon diversity, and, well, these dolphins.
You should rebalance the power of the dolphin. These should be slower than boats (only faster in special charges), haven't is own attack when rided, and be unable to transport things;
with the advantage of be a "underwater battle vehicle" to be different to boats and have a different utility;
at the same way that horses are unable to transport things but are omnidirectional, while minecarts are able to transport things and faster.
I don't think cheaper and more powerful is actually the description, just different. How easy / hard is it to tame them?

We can always adjust the concept...at this point it's just theoretical.
It would be the only mount with attack capabilities though. There's not a tamable sea creature who can attack...and wolves drown, which makes me sad!

As for the dolphins themselves and the critiques, I suggest making dolphins a source of fast underwater transportation (faster than swimming underwater, but not as fast as a full speed minecart) that lets you breathe longer, while being slower on the surface of the water, where boats are. On the surface of the water, dolphins may only be able to swim as fast as the average speed of boats and possibly be able to jump out of the water and do tricks (oh wait, that part was already in your suggestion...). Just to balance out the speeds of the dolphin.

On thetransportation of live dolphins.
There are circumstances where a boat might be better or where an animal might be better. I can break and transport a boat, probably not a dolphin. It may be that a dolphin swims faster in certain circumstances, slower in others.

The idea of battling dolphins is intriguing.
I would be interesting to expand on the current sea life available.
