Iron Bars will not speed up, it takes much longer for a Zombie Golem to turn back into a Iron Golem. When killed, they drop iron ingots and rotten flesh. No poppies. Zombie Golems have the range of 36 blocks (which is less than the zombie), and when spotted a villager, the range will increase to 38. Their attack rate is slower than the Iron Golem. They do not burn in sunlight.

I'd like to add on that the chances of an Iron Golem actually getting killed by a Zombie are fairly low, due to the Golem having better attack range and power. In fact, it's much more likely for a Golem to get shot to death by a Skeleton, based on my observations.
You said that these "Zombie Golems" attack Villagers, right? We really don't need to risk having the entire village be effortlessly wiped out just because one Zombie managed to finish off an Iron Golem. Villagers are not exactly the smartest guys, so there's no guarantee they'll stay indoors during the day, despite there being a hulking mass of rotten metal outside their door waiting to splatter them against the ground.

The concept is pretty interesting, I'd love to see that, but I think the one we have is zombified and mindless enough. Not that I'm bringing realism into this, but how does a golem get infected? He doesn't have veins or blood or anything. I mean, I'd be down with a golem reskin depending on what kind of village he spawned in or something.
Doesn't seem too reasonable or practical for the Iron Golem to have that setup.

Easy: 5.5 damage (3.5 hearts) - 13 damage (6.5 hearts)
Normal: 9 damage (4.5 hearts) - 23 damage (11.5 hearts)
Hard: 12 damage (6 hearts) - 34 damage (17 hearts)

Iron golems are utility mobs which means they are not actually alive, also they are made of metal so that's not possible.

Also metal can't get infected, how about over time the iron golem will produce rust and be a hostile mob.
