(I've seen some similar suggestions, but not this specifically, so forgive me if this is a duplicate suggestion)
Okay before you shoot me just hear me out.
I think it would be wonderful to tame polar bears, but not in the same way as wolves and cats. After all, wolves and cats are much less dangerous than a polar bear (well, if you have a large pack of angry wolves and no armor you might have a problem, but point being that they aren't as dangerous as a polar bear, especially on their own). I think you should be able to tame polar bear cubs, but not adult bears. This would create a risk in taming them (as the mother bear would probably get angry if you tried to tame a cub, making it very risky), as you'd need to lure the cub away from its mother to tame it. Cubs could be lured and tamed by fish (but taming would be expensive), and would be untameable until more than x blocks from their mother (32 or 64 or something). Now I know this could still create a problem if players tamed two cubs and then infinitely bred them to get a polar bear army... perhaps there could be some restrictions on breeding or something to keep that from happening.
Tamed polar bears should be rideable when grown. They'd require the use of a saddle, and would be significantly slower than horses. However, if a hostile mob came within reach of a polar bear while it was being ridden by the player, the polar bear would attack it. Hostile mobs would fight back, however, and potentially damage the polar bear, so riding them at night could be risky. Polar bears would not move to attack a hostile mob while being ridden, however (so as not to disrupt player control). Polar bears could be ridden through water at a faster speed than the player could travel on foot.
While not being ridden, tamed polar bears could be told to sit or stand. This behavior would function much like it does with wolves and cats. While standing, the polar bear would follow the player and attack mobs that attack or are attacked by the player. Sitting is... well, sitting. Perhaps a third state could be added, too-- a wandering state (shift + right click maybe?). In this state, polar bears would wander normally, just like a farm animal. Unless some of my other suggestions were implemented, this might not be that functional, but it would still be cool (people could create "nature preserves" with polar bears roaming the tundra... heck, this would even be great if it were added to wolves and cats! More aesthetic than anything, but still).
In addition to taming cubs, it would be neat if polar bears had natural population fluctuations in the wild. This would be a bit harder to implement, but I still see it as being very do-able. We already have mother polar bears and cubs, but once those cubs grow up, they aren't replaced as far as I understand. If you're in an area long enough, eventually you'd end up with just a bunch of adult polar bears and no more cubs (which would stink if my above idea for taming is implemented).
Perhaps instead of just having female polar bears, males could be added too. Male polar bears would be slightly larger and stronger than females (and, of course, wouldn't have cubs). Cubs could grow up to be male or female. If a male polar bear met a female polar bear with no cubs in the wild, there would be a chance that they'd mate. This would happen just like when a player breeds livestock, only without player intervention. The female would acquire two new cubs, and they'd go their separate ways.
However, this would create a polar bear population explosion. So to combat that, the territorial nature of polar bears could be implemented. If two female polar bears with cubs, two males, or a female with cubs and a male met, the adult polar bears would fight. Unless interrupted, one or both polar bears would most likely be killed-- thereby balancing out the population. Of course, this would leave orphaned cubs behind. Orphaned cubs could have a natural countdown timer-- if they are not tamed by a player or reach adulthood in that time, they'll die. This will help keep the population down, but will also perhaps afford the player a chance to tame a cub.
In order to prevent male polar bears that have just mated from turning on their own mate and offspring, a timer could be implemented in which the male will not attack any females with cubs (he might still attack other males) unless attacked first, and in which the female will not attack males unless she is attacked first.
This could be a fun, interesting dynamic (and could allow people to play the zoologist if they wanted to! lol) and would provide, I think, a balanced way to tame polar bears. Unless the player went in and killed a bunch of polar bears, their populations would probably remain fairly stable, but if the player was careful and only took a cub or two at a time (and only took those that would die anyway), they could in time end up with a sizeable tame polar bear population. However, that would only be after a lot of time and hard work.
Aside from this, if taming was added, here are a few other features I think would be cool.
-Fishing.
Wild polar bears might occasionally go fishing, and so would tamed polar bears in the wandering state. Polar bears would enter the water, and 1-3 fish would be randomly dropped on the ground after they exit it. A clever player could use this to their advantage to slowly accumulate fish. However, fishing would be pretty rare still (rarer than chickens laying eggs).
-Polar bear armor.
Polar bear armor would not be made of pure metal (like horse armor presumably is), but would be made of leather (lots of it!). Nine leather would be crafted together to make "large leather" or something like that, which could be used to make polar bear armor. The recipe could be something like this:

This
would mean that, to make one polar bear armor, you'd need 63 leather! And we all know that leather breaks quickly. Polar bear armor would
have more durability than a player's leather armor, due to it being made of large leather, but would still be weaker than, say, iron armor.

Reinforced polar bear armor could be made with the following recipe:

X = Leather polar bear armor (Undamaged!!)
I = Iron ingot
Reinforced
polar bear armor would last as long as a player's iron armor, and could be enchanted with unbreaking to make it last even longer. However, if your polar bears are out fighting a lot, even this armor would wear out. If you're serious about a fighting force of polar bears, you could make Bejeweled polar bear armor.
Bejeweled polar bear armor:
D X D
D N D
E -- E
X = Reinforced polar bear armor (Undamaged!!)
D = Diamond
N = Nether star
E = Emerald
As you can see, Bejeweled polar bear armor is extremely expensive, but would have the same base durability and protection as a player's diamond
armor. It could also be enchanted with any "armor" enchantments, making it a very powerful endgame item.
Feel free to make suggestions off my suggestions! This is just something I think would be cool to see in Minecraft
I was right with you until you started talking about population fluctuations (serves no real purpose), gendered bears (all mobs in Minecraft are genderless, for gameplay reasons as well as other reasons), territorial polar bears (fairly useless when a breeding cap could be used), and the Polar Bear Armor (no real opinion on it, it just doesn't seem useful).
I would like the rest though, provided it is balanced properly. It seems pretty good.

I'm seeing a lot of copycatting here. I don't see any reason at all for another tamable animal unless it does something unique and different. You're basically combining the wolf and horse into one mob. And everything in Minecraft is genderless, adding genders/fluctuations of animals just adds pointless complications and potential micromanagement. There's just no positive objective reason to add something like that.
Polar bear fishing and armor just adds to the overpoweredness of this. Because if I have some buff iron-armored bear on my side, what do I need wolves for? I have this big multi-tasking animal doing it all. No support.

It doesn't work from a gameplay standpoint, either mechanically or in a balance sense. This copies from other mobs. It may be slower than a horse, but that's okay, since terrain isn't usually flat or long enough for that speed to be effective. And you don't need to just sit back and let your bear take damage. You can use a bow. With the altered viewpoint it'd be difficult to accidentally hurt the polar bear, unlike with wolves. This has all of the advantages of wolves and horses with its only drawbacks being things that aren't really drawbacks.
I don't think you're going to reach that sweet spot between too useful and not useful enough. It'd be better if you just found a different use altogether and made it all about that, only I don't know what that'd be with polar bears.

Creepers don't target helper mobs, and helper mobs don't target Creepers. This is because the helper mobs would just get themselves killed if they engaged with a Creeper. The "high price" doesn't negate the fact that the mechanics are unoriginal and copied.
Each utility mob is unique with very spaced out pros and cons. With the addition of the Iron Golem, I really don't think we need another fighting utility mob. Your idea is just redundant. These bears being slow don't balance out how multi-tasking and idea-mashed. The bears should do something original if it can be tamed.

Love this idea and love the fishing part but just not the armor one. I hope Mojang takes this into consideration because I love having animals just for fun. This is the same situation with polar bears o.o You can't hunt them because unless I'm mistaken they don't respawn o.o Hence why I want to be able to breed them........
Why is this necessary? We already have horses and dogs. The only thing that sounds cool is fishing, but even then that seems like something an ocelot should do, because wouldn't a bear just eat it? Also I'd like a wild animal that can't be tamed.
