Thieves would be villagers dressed in black attire.
The reason I had this idea was because the only thing your stuff is in danger from is players but there are no other players in singleplayer.
NO POINT IN DEFENDING CHESTS IS THERE?
If Minecraft add thieves, there would be a point.
Thief stats:
Base health:8 (4 Hearts)
Drops: 1 Iron Ingot, 8 Redstone, 1 Diamond Pickaxe & 3 Diamonds + What he's stolen.
Spawn: Rarely at night, Frequently at Gang dens, Occasionally around villages
Actions:
If the Thief detects a player in melee weapon range, he will try to escape/run/hide.
If the Thief detects (in a 25 block radius) a bow aimed at him, he will attempt to hide.
If the Thief detects a chest in a 50 block radius, he will loot it if possible.
If the Thief gets to the chest he will take:
Easy mode: 3 random items
Normal mode: 5 random items
Hard mode: 9 random items
If the thief detects glass in the way he will break it.
If the thief has to climb he will place ladders.
If the thief detects a door he will open it.
If the thief detects a iron block he will slowly mine it.
If the thief steals armour he will put the best on.
If the thief gets a bow he will shoot at the player if he is out of danger. (Unlimited Plain Arrows but will use any he's picked up first!)
If the thief find an iron door in the way he will pick the lock. (i.e. it will open and stay open until the redstone signal is reset or the door is replaced.)
If the thief gets a sword or tool he will turn it into whatever it's made from. e.g. Iron Sword > 2 Iron Ingots, Wood Axe > 1 Wood Plank.
If he finds player loot he will pick it up.
If the thief finds redstone dust he will disable it.
If the thief sees a pressure plate, he will avoid it unless it is in his way.
If 2 thieves are near each other they will work together by going opposite sides of the target chest.
If there are more than 4 thieves in a group they will attack you (with no weapons) instead of running away. (This means the same damage per hit as an empty-handed player.)
He will loot the following:
Dispensers
Chests
Droppers
Hoppers
Furnaces
Thief dens will be randomly generated underground structures (Y= >32) with a hole going to the surface (1x1 hole blocked by a glass block at the top.)
They will contain new chests called "Thief's Chest"(s) where thieves will deposit their loot.
If the player mines the thief chest, he will get a regular chest and the loot.
If the thieves run out of room, they will place another thief chest (In their den or where sunlight drops below 8) to fill up.
There will be 8 - 19 thieves in the thief den.
If you get near their den they might follow you home.
Strategies:
Thieves will steal when you are not home.
You are screwed if the thief den gangs up on you.
Thieves will most likely stay away when you are camping by your chests in your home.
Now your diamonds are in danger. YAY! (Sarcasm)

This sounds really annoying. It has no upsides and all it does is make it impossible to defend your chests. I don't think anyone would find a trap-destroying,

This is just a in game griefer, if you wanna get griefed play on a server where it is allowed. The griefers will be a lot smarter, take all of your stuff, and do it multiple times. I'm sure that would be hard enough for you wouldn't it? No support
This is literally the first example of a bad post in the "how to make a suggestion" thread. (And if I'm wrong it's at least IN the thread as an example bad post). This would literally just be a greifer. He breaks iron bars? What if you had a building with iron bars incorporated, he'd literally just destroy it. He breaks REDSTONE!? That's the worst type of grief ing there is! That would be incredibly annoying to deal with! Nobody wants their stuff in danger, and just because you think the game is too hard doesn't mean everyone does. If you want to play a super hard version of the game, I hate to say it but download a mod, as mojang will never approve of this level of difficulty.

It would be strange if it was added to hardcore mode. There aren't any other mobs or buildings that are only enabled in hardcore mode. Also again this is literary a griefer npc. The majority of the minecraft community dislike griefing, and it's banned on most servers. If this was added to hardcore mode I'd stick with a later version of the game because it'd just be plain annoying. I'm also sure there are people who play hardcore mode who don't want npc's destroying and stealing there stuff.
This would just be extremely annoying. It isn't a challenge, it's just overkill and has nothing good for the player. Not everyone finds Minecraft to be easy and restricting it to something like hardcore mode, would ruin that gameplay mode.
I like the idea for an apocalypse mode where villagers are hostile creepers tunnel their way to you and your always moving in and out of homes to survive but for some reason people don't like the idea.
Xystem4 is correct, it is in there as an example of a bad post.
It mentions "the ability to steal items from players and their chests", stating that it is "pretty overpowered" and "nothing but pure annoyance". Although OP's version is a less bulky and more of a dodge god kind of thief it is still the same idea; an annoying mob that steals your stuff.
The thread also advises against suggestions just because you think the game is too easy.
THERE IS NO POINT IN DEFENDING CHESTS, NOW, ARE THERE?
Well if minecraft add thieves, there would be a point.
But then go on to suggest that the thief have a way of detecting pretty much every kind of trap imaginable? Then there still is no point, as any attempt to do so is futile. I don't support this idea, it just sounds annoying.
What you are doing is just suggesting an almighty annoyance to the player, not a challenge. He can jump over fences, break glass, destroy redstone, can crawl through 1x1 gaps, can place ladders, press buttons... it pretty much removes the ability to progress the game, as you need to constantly be next to your items to keep them safe. And yes, I know they are rare.
Also, if you think singleplayer is too easy, GET SOME MODS! Don't speak for all of us. Remember that Minecraft is already hard enough for some players. "but they can play pea-" Some may want to play on a harder version. Peaceful gets boring fast. They need to be able to train themselves, and having these thieves isn't gonna help.
Partial support here. I feel like it would be simple enough to just enable him to open doors to get to your stuff. The other methods of entry are really overkill. I can maybe see him picking the lock to an iron door, but breaking glass, crawling through holes the player can't, jumping over a fence, etc. sound more annoying rather than challenging. One more thing I would take issue with would be their loot drop; maybe it could be bars or something, as diamond equipment is incredibly hard to come by and this would be a mob ripe for grinding. Gang dens would be excellent.

No support, not only is it overpowered, but it is mentioned in the "bad ideas" post that having anything be a "x difficulty only" option is a cop out way of "fixing" a flawed idea.
Sounds a little annoying. I don't like how a thief can sense a chest within a 100 block radius. Plus, this would make it useless to have chests due to thieves raiding all of it and maybe taking all of your stuff.
