I've got a good one for multiplayer maps and servers. enablePVP can disable or enable PVP when false or true, correspondingly. This would help in multiplayer maps because if you and your friend are going to be in close quarters you don't want to accidentally hit each other. This gamerule will keep you and them from taking damage from eachother.

Personally, I have never been bothered by endermen carrying blocks, but I am aware why it would annoy some people, destroying their buildings.
But, the reason why I think this shouldn't be a gamerule because there is no other gamerule that affects just one type of mob. If we added that, it would be logical to add gamerules like: creeperGrief, silverfishGrief, ghastsGrief, perhaps enderdragonGrief and witherGrief etc. That would mean a huge amount of gamerules that do the same thing, but to different mobs.
but the rest of the mob griefing is essential to the gameplay and mobs themselves, while the endermen griefing is just useless and doesn't even have a scary/important effect besides ruining the landscape uncontrollably.
you can prevent Creeper and Ghast explosion by outsmart them, prevent Wither damage by spawning it above the Nether/not spawning it, prevent Silverfish damage by disabling the spawner, and the Enderdragon cannot destroy End blocks. Those mobs grief as a result of something or they can be nerfed or disabled in vanilla survival, while Endermen just pick up everything and you just stand there as they ruin your precious land without nothing you can do about it.

As a passionate map maker and redstone user I think these would be very helpful, especially the fall damage one.

To resolve the mob griefing issue, how about /gamerule mobGriefing <True/False> [Mob, leave blank to make this apply for all mobs]
