Ok so sheep, horses, and ocelots are the only mobs that have different variations in their textures.. Why have the cows, chickens, and pigs been left out? Especially wolves. There are a ton of different colors that each mob could have mainly cows and wolves.
For cows there could be spots, no spots, and that half and half look some animals have and to go along with that the colors brown, white, black and gray could create random different herds similar to horses.
For wolves there could be three different texture once tamed, just like the ocelots and the dog colors would be normal, blackish, and a tan color. Perhaps even a few other variations.
As for the other mobs, some chickens are brown and even reddish in color.
Pigs can be red an odd reddish color, pale white, black, and brown.
I don't know much about coding but this wouldn't take that much reworking would it? And can't hostile mobs like the zombie and the spider have variations as well? Why all the same color?
This is an excellent idea! There should be nether sheep that occasionally spawn in the overworld and kill the player if they are deceived into believing they are actual sheep.

Ok I have nothing against your idea, but what did that have to do with different mobs textures?
Hmm, I support this, but it's basically Optifine or MCPatcher.

There are things known as the 10 Suggestion Commandments. Many know the obvious, such as, "Thou shalt search before typing thy post," or, "Thou shalt not be vague," but one that no one knows is, "Thou shalt organize thy post." More people need to know of this commandment.
An excellent idea, and a not-so-redundant once at that.
The only negative I can think of here is that different colored mobs could be confusing to make out from a distance and could be mistaken for other mobs, but that's a very miniscule negative, as even some colors of horses can do this.
I kinda like it about the chikens and cows but not for the pigs. I dont like it cause sometimes it may lead into confusiong in what mob it is cause the textures may be similar for cows and horses. For now 50% support.

Yeah, why not? This is an excellent idea! However, it shouldn't only be a colour change, in which I mean a plain old recolour. You should also provide a list of examples and organise your post a bit more clearly.

Make a list
like this
for each
mob variety.
I tried doing that before and someone told me to organize my stuff better. Maybe they either didn't like it or I was just doing it wrong. Fixing it. (again)

Critiquing is easy. Creating is difficult.
