I've been playing the alpha and I can say it is gorgeous! Dynamic lighting, survival, and waterfalls. While the latter might be one of the most prettiest parts of the game, I absolutely HATE the new water system Notch coded in. In the alpha version, you may have noticed the difference where water actually bends and has directions. It looks nice and all but the huge problem with the new water is that the water doesn't act like water. Water in Minecraft Classic was like water in block form where water stacked, could overflow, and if not careful enough, flooded. This led to awesome scenarios with huge pools of water flooding everything:

In the new Minecraft Alpha if you have a sharp eye, you'll realize that the water is flowing into the gap, the water is bended towards the gap, and that the gap is a level lower than the water level. The HUGE problem here is that even though theres a gap in the floor, the water is never equalizing its water level, it never overflows. Newton would be pissed with the new Minecraft Alpha update. Although waterfalls are all pretty and nice looking, the water falls and disappears on the ground. In real life, water falls always lead into rivers where water would end up. The water in the new alpha never stacks, it can never flood, it just constantly disappears after traveling an amount of blocks. Although the water bends and has flowing directions, it is considerably less realistic than Creative Minecraft water. And this brings up problems like shown in this video:

I think that the best solution would be for Notch to readd in stackable water, and always have waterfalls hit rivers because I really miss water physics.
The problem is, nobody wants to flood their entire Alpha world because someone just happened to spring a leak in a lake on a mountain. I really don't like the old water physics. Even though the new water physics are ungodly awkward, it's much better than the old.

Using a bucket of water containing 1m^3 of water should not flood a map regardless of size.
The water then was fixed to prevent exactly what you're trying to bring back to abuse.
I would prefer a totally revamped water system, separate from both new and old water systems. There have been quite a few very detailed and good ideas out there, and hopefully some of those get added.
Frankly i don't agree. As a spring will not be able to function then.
If it could happen, water should be made more realistic, however I do quite like parting the seas, it looks quite awesome.

I'm doubting the current water and lava flowing system is here to stay. They're not fluid enough currently, but at the same time the old water system was a bit over kill. Still, water is good enough for now, and will probably be improved in the future.
I'd rather not. The water in the classic version is incredibly annoying. A single leak would flood the entire map and you'd have to clean it all up manually.
The current alpha system has it's flaws, but replacing it with an even less perfect system would be a bad decision. I'd rather just wait for Notch to find a proper solution.

I believe springs should keep the current water mechanics. This allows for these nifty little water flows running through mines without causing too much damage.
However, I think NATURALLY SPAWNED OCEAN SPRINGS, ie, you didn't bucket the **** and it's not a spring, should spout CONSIDERABLY more water or even better, use the method earlier described about water displacement that Ignuus66 described.
Yes, water needs a revamp, No, the old water is not the answer. All of its problems are made even worse on an infinite map. While flooding can be interesting, how it occurred before was not good. 1 mistake, and your mines are instantly flooded. 1 misplaced block, and the entire map is underwater. No, the old water is not a good solution.
I liked the finite water in INDEV; You could mine out a cave under a lake and the entire lake would drain into the cave.
I'd really like to see that merged with the visual appeal of the current water system.
