I think I've got one. You know how in fable two, they had that one minigame where you filled up the cups with ale? We could do a system like that, where the "low" zone = a fail, the "medium" zone has a slight chance of fail, and the zombies start with less health, and the "green" zone is full success rate and they start with full health.
Edit: and if you are so slow that it reaches the end it counts as a fail as well
Edit 2: And I don't mean a time limit on crafting it, I mean when done you try the minigame by holding the picture of the undead you want.
A fail would summon a zombie that is aggresive to you, thus loosing your mats and adding a risk.

And complicated? only to actually MAKE it functional, i think, i understand everything you wanted to show of, and the Recipes makes allot of sense.

While your holding the button with the face of the creature your about to summon,this blood bar fills up (quickly).
If you stop holding to the left of the red bar, its a guarrenteed fail.
If its to the left of the yellow bar (and the right of the red) It has a high probability of failure, and any successful zombie that comes from it will have a health penalty.
If its to the right of the yellow bar, its in the safe zone. If you release here, your guarrenteed a good zombie.
If you wait too long, and the blood meter hits the other side of the bar, it fails.

I'm back, and I've got to say, I love the pictures.
Anyways, I like the idea of a blood bar on the bottom left, gives it a high tension feel.
Doesn't seem to fit in with the essence of Minecraft... maybe with the Halloween update and the new mobs the combat/survival side of Minecraft will be increased.
Question: Do you want the golems in? Or with a different recipe? Any other material types you think they should be made of?

@Jaydaytime Minecraft is whatever you make it, which makes it more unique than other games. So by bringing necromancy into this game, I can be a necromancer, which other games don't let me be.
@Torb- If your going to make golems on a necromancy table, that won't sound right. Because golems weren't actually alive in the first place, they are just inanimate. So you should change the name of the table.

I think golems sound just fine,
Then again i enjoyed playing as the necromancer in Diablo and that let you have you a golem.
I like this idea generally, and i think it fits with the whole minecraft thing.
After all, notch has said he's thinking about finding a way to 'enchant' items in a way, and this goes along with that same kind of system.

If this was actually implented then i would probably gather as many low level minions as possible and just row them up next to some huge cave walkway.
