The number one item I'd like to see is some sort of portable torch or lantern. Let me explain.
My vision of the item would be somewhat like the torches in Oblivion. That is, when you have them equipped, they take up a weapon slot (in Minecraft that would mean you would have the item selected on the quick bar). This way you could light up caves as you walk through them, rather than by placing torches everywhere.
This could be implemented either by causing the player to luminesce when a torch is selected, or by adding a new item.
Related suggestion, though perhaps more of a wish-list item, would be a helmet-mounted lantern, like real world miners use. This would be created perhaps by fusing a regular helm with a torch or lantern.
The end result of either of these would be a more realistic cave-exploration experience, and would remove the need to clutter all underground areas with permanent torches.

Ugh. I hate people who go around saying Notch said it was impossible. He said the OPPOSITE:
"The Layered lighting engine was suggested by Asmodean (I hope I spelled that right) on IRC, and will make day/night transitions almost instantaneous at the cost of some extra RAM. It would also enable carried light sources at the cost of even more RAM."
He has tried it before, but described it as "nauseating." So we'll have to wait and see if he's going to give it another shot, but we don't know if it's something he'll bother with.
Some guy suggested using OpenGL lights for the rendering based on the quantized model running on the background. So the game logic will use the same model it uses right now, but the rendering is done via hardware accelerated lights.
I think that would definitely work, and light would be really smooth. And it would allow other cosmetic details, like bump mapping. Pixel-art based bump mapping looks great.
