Ive seen videos on making blocks pushable amd making custom mobs with armorstands, my question is can i make stone block enemies? My thought is to put armor stand in stone blocks and make them move in unision and make a mob thats 8x3x1 made of stone, then use /testfor:rclick[iron_sword] (arrow, ect.) which will test when it gets hit, after 4/5 hits it will remove that block meaning the player can chip away at this enemy while fighting it
Using that it will clone the stone block towards the player if the player is in the Selection(S), (M) being the monster and (A) empty or air.

If that will work for your plans I will help further. P.S. the player would be able to mine the monster like that without any hit detection and it wouldn't get back the broken blocks.
P.P.S You would be able to sufocate the player like that or you can use a instant damage effect.

Thank you for your insight, the map is an adventure map so they wont be able to break the blocks. I was hoping to make the stone monster look like this:
You could teleport a large slime, enderdragon, giant or any mob with large hitbox to the statue and remove the statue when that creature is killed. If you use enderdragon you even get a healthbar on it...

Creations are only restricted by your imagination.
If your okay with using resource packs I can make a block model that you have to put onto a Giants's head. Then it will have it's own hitbox and you can use the generic attributes to make it stronger/faster/healthier. And the Giant will need to be invisible .

Why don't you just make an invisible zombie wearing a stone?
I think instead of having armorstands since the AI would be hard you should have 1 armorstand (Inviisble NoGravity). Then have a once off:
/execute @e[name=StoneMonster] ~ ~ ~ /fill ~4 ~2 ~4 ~-4 ~-1 ~-4
Then you could have something like:
/execute @a ~ ~ ~ /execute @e[name=StoneMonster,type=ArmorStand,dx=5,dz=5] ~ ~ ~ /clone ~4 ~2 ~4 ~-4 ~-1 ~-4 ~1 ~ ~1
/tp @e[name=StoneMonster,type=ArmorStand,dx=5,dz=5] ~1 ~ ~1
