I am working on a redstoned village. When it is nighttime, the pistons push a 2 high gravel wall up, as sort of a barricade defense against zombies. It is automated, but there are manual overrides. I need some other things to add to my village. Any ideas?

A cool design would be a sensor that when activated by a pressure plate a dispenser is pushed out of a secret wall and shoots a arrow/fireball at the mob that needs to be killed.

Good idea. Sadly, dispensers can't be pushed by pistons D:
I couldn't really frequesnt it though, I would need room for all the pistons and crap.
I myself have a village... Naturally I walled it and added trading stalls. No redstone for that.
But I also wanted an 'natural' iron farm (non of these derpy cubes, I want it as part of the village) so I hid that behind the trading stalls, and access it through the village well. The Library was expands a bit into enchanting room.
I also needed trades, so under the village I also built, fully-automatic chicken (raw) farm, fully-auto suger cane farm, (both totally hands off), a bone meal to wheat converter (etho design), and from a chest in the forge, I have a hidden wood to charcoal maker.
I also have a sheep pen, but while I don't have a cow/pig farm yet, I plan on a automated breeding and killing design for those too.
I use rails to transport villages, and have now about 200 doors (two door in each trading stall, plus more in iron farm to 'center' the village on that location.
So there is still a lot of redstone (and non-redstone) that can be done in a village, without even making that technology visible. The Village looks like a very large spread out village but with trading areas in the center.
I can trade charcoal, wool, wheat, paper, for emeralds to get diamond and chain armour, diamond tools, assorted enchantments for those, and at this time about 8 enchanted book traders. I have even had to add more stalls (with appropriate door adjustments for the iron farm) as I keep running out of stalls for the special enchanted traders.

A redstone-powered train gateway would work, uses Sethbling's Minecart Launch Station for the endpoints, and uses pressure plate rails to close off the gateway from, for example, creepers.

P.S. I could help you with railway engineering, and some piston walls on PC. Specializing in logic gates, various compact pulsers, and compact redstone circuits. However, I can't help with BUD switches.

That would be a nice idea! One problem;
The village is TINY. I just found a village on superflat and used that :l
You could make a secret door that leads to a redstone controlling room with levers and buttons and signs on what the levers and buttons do. If someone finds that door, you can put a combination lock door. (make sure no one knows the pass)

Well, you can use a daylight sensor, a piston and a block of redstone along with some redstone torches to make some sort of automatic torch? The sensor powers a piston which keeps a redstone block next to some redstone torches, and when it powers down, the piston pulls the redstone block out, which allows the torches to function
