So, I after a fair bit of playing around in creative in the 1.8 snapshots, I've decided to try a technique I was working on in Survival.
I previewed a few seeds, and found one I liked - good variety of biomes and at least one town likely within 300 blocks of spawn. Hopped in, killed a tree for a few resources, and started my blind-run for the nearby town. Now, I'm a bit lazy in some regards, and when I'm not fighting anything, I generally don't worry about my hunger meter. I figure I can recover from most environmental damage if I've got half my health, so I'll eat when I'm ready to do something somewhat dangerous. Needless to say, I let my hunger gauge empty out.
I'd already missed a steep drop and been a little too close to a creeper when it exploded, so I was quite surprised to see my 3 remaining hearts begin depleting - to only stop when I was down to half a heart! For a moment I was concerned I'd even die of hunger, and it both surprised and annoyed me. Anybody else run into this yet? What do you think of walking around a sneeze from dead because you haven't eaten recently enough?

Running out of stamina now damages you down to half a heart. What do you think of that hidden 'improvement.'
Scendra said it. Bump up the challenge if you want to waste away to nothing.
Easy - You'll starve down to 5 hearts
Normal - You'll go down to 1 HP

Seriously, pretty much since hunger was introduced. Sprinting and jumping increases the amount drained.
This. Having no hunger bars left has always reduced your health. How far down it reduces your health depends on the difficulty setting. Sounds like you've been playing on "Easy" all long, and just realized how "Normal" works.
There is a way to fix this, but it's really complicated. I had a lot of trouble figuring it out myself.
1.) First, you must manage to find the "Esc" button on your keyboard, and then you actually have to press it. (You're allowed to skip this step if you find yourself on the title screen.)
2.) You must find the extremely well-hidden "Options..." button in the menu you're in.
3.) Now, this is the hardest part. You have to locate the button that's labeled "Difficulty: Normal" and press it not once, not twice, but THREE TIMES to get it to be on the setting you want. Oh, but you must be careful not to accidentally click the button with a lock on it, as this will permanently set your world to use this type of hunger.
It took me lots of hard work and toil to find out this method. I just hope it works for you. If at any point you are confused by these instructions, feel free to ask any questions.

I normally don't set the difficulty up when I'm just playing with new features, and if I set the difficulty up I pay more attention to my stamina because I expect the mobs to, you know, actually damage me..
