1. They have flexible legs (Steve once had these, but they were abolished because they didn't fit with the game style)
2. Random Skins (skin overlays are a great idea, though)
3. Too-complex texture maps and models (the dragon is scarcely more complex)
4. Pre-attached interactive objects (example, saddles aren't in pig skin textures)
Here's me looking beyond the fact that they resemble dogs more than horses.
It's not that Minecraft can't change the rules along the way - the revamped resource system has re-ordered the entire texture structure into something far more logical. Everything is now properly named, eliminating guesswork.
If they're going to change the rules, can we expect cows with random skins and uniquely colored creepers in the future? Should we?
This is a change in the expected behavior of an established experience, and always carries with it risks. In my opinion this adds confusion from a design perspective. The change has to be worthwhile, otherwise players will be quietly estranged and put off.
Especially those who know horses.

Maybe. I personally think variety is a good thing. If someone is honestly offended or estranged over horses though, then they should probably get over themselves.
Get over yourself. There are no rules, except for those in your (highly delusional) mind.
As for the textures, it is a great step forward, and I am hoping it will expand further to also include seperate textures being assigned for things like stairs and fences - this would be a godsend for many (I would love to finally have seperate textures for fences so I can make them look like fences and not mismatched wood) the introduction with different log tops and birch leaves is a hint to this direction.
I do agree, though: there's something about horses that seems un-Minecraft-y to me, though I'll probably get used to it once 1.6 has been out for a day or three.
Where is your source? (I'm going to assume the same source that defines what "Minecrafty" is, www.imadeitup.com)
Because, as far as I know, there is no official documentation of how a mob should look. Also, you mentioned the dragon has only slightly more textural fidelity, so there for, it also breaks your false rules and horses don't have flexible legs, that is a fabrication in every sense of the word. Finally, pre-attached interactive objects is pretty much an entirely internal thing that has no effect on visual design. and what would improve horses by spiting off the saddle texture into it's own texture file anyways?
Yes, other people have noticed. There are several other threads saying the same thing.
It's a hard case to present to Mojang though. Since the beginning of time, people who just don't get Minecraft have complained that "it doesn't look good". And the effect of this is to shut the ears of the devs to people complaining about the look of Minecraft. There literally is no way for Mojang to get valuable feedback on the look of Minecraft.
Because essentially the argument you're making is that the horses look "too good", which is the opposite of what the ignorant masses have been throwing at Mojang for these two to three past years.
Maybe you can get somewhere with "please make all the mobs consistently detailed" which is basically asking Mojang to do a ton of work for very little (or possibly negative) reward.
I think you might be able to get somewhere with "uncanny valley" if you can appeal to the pretentious side of the devs, who want to be all trendy with the latest in game development theory, but I suspect they only have a passing familiarity with the phrase, and don't really understand its implications for Minecraft.

Now, if we had more of a use of Horses, and a more difficult way of taming them, maybe I'd complain less.
As far as I'm concerned, they were. In the forms of pigs.
Prior to the release of horses, everything kind of fit together. Horses deviate from previously established conventions. To say otherwise is akin to saying that horses have always been in Minecraft, which, well... you go on thinking that.
Enter that and you'll score one hundred thousand rupees for us both, along with a spiffy card!
More detailed textures/models should be left to mods. The vanilla game should be kept simpler. I mean, the API is supposed to be the primary form of customization/keeping the game fresh. Seriously, I think the API should bring "Minecraft 2.0." 2.1 and everything after would be primarily bugfixes, and any new features would be in the form of mods (resource packs :P) made by Mojang. This way, "Don't like it, don't use it" is somewhat practical. XD
And please, please don't turn this into a flame war about horses being redundant, "ruining" pigs, etc. etc. etc...
There were no ambient mobs until they added bats, after all.
Complaining about useless things since the 1.8 update..
