Well I personally believe that in coming updates each difficulty mode will reflect its name, at least thats my hope. Creepers getting a needed buff for hard mode was the first step, they just need to follow through with it. I do agree that at current its silly that it seems like minecraft has headed in the direction of catering to kids who want to play on a harder mode just to say they did it to their friends, and then they whine when it actually becomes harder. I'm quite sick of casuals.
It's not THAT easy... I mean, you can dig a hole and live, but thats not survival. Just because a few things are nerfed and stuff is added does not mean that it is easier. Although it is easier than it used to be, that does not make it super easy.

It's cool to have new features but at least give the game a challenge (or at least at least keep the little amount of challenge the games always had)

I felt the enchanting system before was very unorganized, a giant pain in the butt to use, and ruined PVP servers. I'm more of an SSP guy but in PVP the people that AFK and mob grind for hours get to win. What about the people that can't devote all that time into getting enchantments? It's nice now because it's going to be used more and most likely be toned down to not make you godlike in PVE. Hard and Hardcore are a decent challenge now. Try doing things like-
Play without beds.
Only eat cookies.
Never use diamond.
This game is about whatever you want so you can do whatever you want. Even though I think this I still think the vanilla direction should be altered, but this is an option.

Well, in your first paragraph none of that really has to do with game difficulty, just crafting.
--The dragon was fixed a couple of snapshots ago, but before that I played hardcore only using leather armor and stone tools and I managed to kill enough blazes and enderman, enter the end and defeat it w/o dying(yay stone sword to the dragon's face!! Btw it usually takes like 20 arrows to get the crystals). I mean yeah, the dragon wasn't fixed when I did that, but I agree the game really isn't that hard.
--The way I play now is that I'm collecting things and try to do all the benchmarks of the game: collect stuff from every biome, visit the nether and get that stuff, make all the kinds of farms, find a mushroom island, etc. etc. Mobs are really just in the way of that, an occasional fight to make it interesting. I used to look for extreme challenge from mobs so I made my own mod and made them very strong, but at this point I'm more geared towards collecting and building.
--Both ways of playing are fun to me, it is kind of sad that they don't provide for challenging mobs. They do add things that could increase difficulty (fixing armor glitch, AI pathing, fixing creeper damage) but they don't take the full step to add damage to the mobs, make them faster, things like that for hard mode. Hard mode feels like what normal mode should be, but a hard mode that is actually fun (if you're in the fighting mood) is something we're forced to mod in ourselves.

Er, no. They did this because it was TERRIBLY BROKEN.
1000 mobs. ONE FREAKING THOUSAND. That's how many it took to get to max level with the previous system. Did this make it hard? ......no, actually, it didnt. It made it completely unfeasable to do it the normal way. The only non-retarded way to get to 50 was to use a bloody grinder built from a spawner. Pretty easy to make, and the only way to make the enchantment system SORTA work.
And I haaaaaaaaaaaaaaaated having to do this. But 1000 freaking mobs? No. I'm not grinding for XP in this game. I'm just not. That can be saved for really bad JRPGs. I used the spawner-grinder-gizmo to just belch XP at me while I watched Youtube for 10 minutes. Doing it the other way, the NORMAL way, would have taken HOURS UPON HOURS.
It was lowered because it was bloody stupid. Try it before you complain about it. And I'm not saying that to be snotty, I actually mean it. Spend some good time messing with it. I'd previously thought pretty much the same as you, well, sorta. I was fine with the 30 max, but originally it looked like XP was going to come too fast. After spending some good time with it, I can say..... no, that's not the case. It now appears to work pretty much as intended from the start. You dont have to JUST kill mobs, you can do all sorts of things, and all of that combines to level you up. Getting to 30 still takes an appreciable amount of time, but it no longer requires a goddamn grinder that feels like cheating. I can get to 30 by adventuring and clobbering skeletons and doing all of the interesting things in the game, instead of standing in a little box for 10 minutes and then lobbing a health potion at a screwed-up ball of zombies.
And other things you mentioned, like the bit with the boats dropping themselves, that's not EASIER, it's just less completely annoying. And they do still break if you crash them. They only drop as an item if YOU break them, just like picking up any block.
Now, all that being said, I agree with you on the general topic: The game is a little too easy.
Though, I'm thinking mostly of combat when I say that. Armor in particular is a BIT way too strong and lasts too long. Combat without armor is dangerous and exciting, but I dont like having to just ignore game elements to make it difficult. Some enemies could do with some tweaking too; the creeper blasts becoming actually deadly again is a good start, but it needs to go further. The Nether in particular, aggressive, non-pigmen monsters need to appear WAY more. That place used to be exciting, right now it's a bit.... well, not as much. I still like it, but it could be challenging again. Having the Blazes and Magma Cubes have more of a presence would be a start.

I know I am, and it is not difficult enough. The difficulty cannot be "punched up" because it doesnt GO any higher. That's part of the problem.

I would have to say navigating the nether can be the most difficult part. Do I want to go in with full gear and many supplies or bring a bowl, a fairly large set of stone picks, a bow, and a coupe of arrows and act like a native so that I don't lose much if I die? Almost every ledge seems to taper off and delve into lava or do something ridiculous to where I can't go somewhere without breaking a bunch of pickaxes or hang in mid-air making a pillar bridge while a ghast could attack me at any moment. Don't forget being in the roof and mining to find somewhere that touches down, gotta love all that open air, all those spots you can fall to your death. :/
Then if I'm looking for a fortress that can be very arduous, and once I get in if I went native style blazes damage me heavily not to mention it takes me forever to find the darn spawner. Honestly I think the nether is the hardest part of the game right now.
Don't even get me started on pre-set aggressive pigmen, but you said non-pigmen so..
Some of what you said is true, but signs, I like to have a chest for every type of item. One for mob drops, one for cobble, smooth, plants etc.. Now try making 50 or 60 signs, right, it is not hard, its tedious. It is like telling someone to make one sign out of 1/5 of a tree, oh wait it is.
Other than that, you are right, except the enchantments, it was screwed up.
Finally someone understands, the difficulty levels are nothing at the moment, hard is not actually hard. I've been suggesting additions to hardcore mode a few times to make actually make it hardcore.
Hardcore is.. meh. It's more like a gamemode if you want to get a high score. I just wish there was a non-one life mode that actually challenged us. People automatically resort to trying to make hardcore harder when regular hard needs it.
How some people still don't realize the impractical implementation of the previous enchanting system is beyond me. Players had to grind for hours upon hours to get anything decent, and that's neither hard nor fun. What Mojang did was tweak this aspect of the gameplay to be a less retarded asset.
I think the key is in giving mobs secondary, mobility-hampering tricks. Or make the environment a bit deadlier. Making lava even just 10% faster would make at least 10% more people die, for instance.

lol people who cry and whine about minecraft being made easier are silly, and what is even more silly are the people saying that the game is hard. I have not read all this thread as it made me a little sick. Minecraft is a fun game simple and straight. Its neither hard or easy and only as complicated as you wish it to be. The enchanting system being changed makes it easier? I doubt that hell I rarely even use enchants unless I'm bored. On that note I don't even use diamond or iron armor half the time because its a waste of material. So why whine about a game thats fun eh? Just enjoy it for what it is and if you want a real challenge in the game .... well invent something.. use your lil ol brain to make something no one has ever though it.. Thats the real challenge.
Well, it does need to be a tad bit harder but let's be honest, it doesn't need to be stupidly hard if hard is going to be beefed up make a very easy mode or classic pre hunger survival mode still with enchanting and all the new stuff but without hunger.
