What's the big issue with horses? It seems a logical next step. The standard barnyard animals exist already, with the horse being the glaring exception. It wouldn't have to be a "cute" horse. It could be a vile tempered pony with a penchant for biting and kicking. Actually I am liking this idea more and more. You would have to chase it with oats for miles to catch it. Then you would have to avoid teeth and hooves to get a saddle on it. Once the saddle was on, you would regularly get bucked off until you accumulated enough time in the saddle (points) to tame it. You could use it to move about a faster speed than on foot. It could instantly flee if a creeper appears, but one might run the risk of being carried off a cliff or into a lava field....hmmm....

iron crossbow with iron-tipped arrows, storage boat, animal-carrying boat, animal feeder, ridable baby enderdragon, gravity-falling lava/water source-entities, iron spikes on fences, clay-ceramic golems/armors/tools, diamond shears, iron-backed books, rotatable handheld map
... and all the other hoofed animals such as antelopes, boars, camels, deers, donkeys, elks, gazelles, giraffes, hippos, moose, rhinos, zebras, etc. while they are at it. Even if they'd just code the snouts, horns, and humps to appear as the "armor" of some generalized model, it'll still be fun to have all those roaming in different biomes for the players to collect.

Diversity maybe? Look at stone bricks, they have no use over cobblestone, they just make the crafting more interesting. Even if horses have no special uses they would still spice up the landscapes. But it is way too early to judge really, we have no idea how Mojang will implement them and whether they will have unique properties or not.

Yeah that sounds better than horses, I love the original mobs.

They've been requested for years, hence why they're in the game. Controllable pigs are more or less an intentional joke that are not very useful.
